Tropical Avocado Toast
You probably noticed the avocado toast trend that seems to be taking over. Everywhere I look I see versions of avocado toast floating around the Internet. I think there is good reason for that and I am here today to share my favorite way to eat avocado toast with this Tropical Avocado Toast.
Back in college when I studied abroad in Costa Rica I fell in love with avocado on toast along with the tropical fruit, especially mango. In Costa Rica a typical breakfast consists of beans and rice, tropical fruit and sometimes avocado. I ate that a lot with the family I lived with and it was the perfect start to my day.
I like toast but I find it pretty boring to just put jelly or butter on it. I love the idea of adding avocado, especially when it is creamy and has the flavors of guacamole. I was inspired by those days in Costa Rica and all of that avocado toast I ate. I think those Costa Ricans were on to something and they didn’t even know it.
Tropical Avocado Toast takes two pieces of toasted Pepperidge Farm® Harvest Blends Seeded Bread tops it with creamy avocado, chopped mango and pineapple and fresh cilantro. It is so simple but full of flavor and healthy ingredients to start your day. The avocado offers you nearly 20 vitamins and minerals in every serving, including potassium {which helps blood pressure}, and folate {which is especially important if you are pregnant, like me!}. It also is a good source of B vitamins to help fight infection and gives you Vitamin C and E. They contain fiber which means if you start your day with one you will feel fuller longer. All of those are positives!
Aside from those healthy avocados and tropical fruits lets talk for a minute about the toast. The bread that you use for the toast is equally important to the toppings you put on it in my opinion. You want a hearty slice of bread that offers you whole grains. The Harvest Blends bread I used was the seeded variety but Pepperidge Farm also have a sprouted and ancient grains version.
The seeded version uses ingredients like sunflower, flax and sesame seeds which I really liked for toast. All of these new varieties are great for sandwich or toast. And of course feel free to get creative by adding other things like diced red onion, sliced cherry tomatoes and other tropical fruits.

Tropical Avocado Toast
Tropical Avocado Toast makes the perfect quick breakfast or snack. The creamy avocado is mixed with lime juice, chopped cilantro and salt and spread on toast and and topped with chopped pineapple, mango and extra cilantro.
Ingredients
- 2 slices of Pepperidge Farm Harvest Blends Seeded bread, toasted
- 1 avocado, skin and pit removed
- 2 Tablespoons lime juice
- Dash of sea salt
- 2 Tablespoons chopped cilantro {extra for garnish}
- 1/4 cup chopped mango
- 1/4 cup chopped pineapple
- Crushed red pepper {optional}
Instructions
- Toast the two slices of bread. While the bread is toasting mash the avocado in a bowl with the back of a fork. Add the lime juice, salt and cilantro and imx to combine.
- Once the toast is done spread the avocado mixture on the toast and top with mango, pineapple and extra cilantro for garnish. Sprinkle crushed red pepper on top of the toast {optional}.
- Enjoy!
Notes
