TROPICAL GREEN SMOOTHIE
I am drinking this Tropical Green Smoothie on a weekly basis and now that summer is here I thought it would be the perfect green smoothie to share with you guys. It is so light and refreshing, making it a must during the hot months!
A few months ago I was invited to attend a Vitamix event at the Vitamix Store in Solon, Ohio. I was in heaven considering I have always wanted a Vitamix. I heard nothing but good things about them and with the amount of smoothies, baby food, soups and dips I make I knew I would put that beauty to good use. Now that I have been using it for a few months I am here to tell you that those Vitamix blenders live up to the hype.
I have been making dressings, soups, dips and smoothies since I got it and am amazed how quickly that bad boy can blend everything up. If you don’t own a blender, no need to worry! This smoothie can be made in any blender that you have. Since it uses an apple, which can be a bit tough to blend, you might just have to add a bit more water or chop the apple into smaller pieces and add it slowly. If you don’t think your blender will enjoy blending up an apple, you can just up the amount of frozen pineapple you use to 1 or 1 1/2 cups. This smoothie tastes delicious either way!
One ingredient in this smoothie that some people often think is strange is the mint. Surprisingly enough, it works wonderfully in this delicious green smoothie. Just two little leaves adds the perfect amount of refreshing mint flavor. I grow mint in my garden so I always have an abundance of it to be use and love finding ways to incorporate it other than my iced tea or tabbouleh salads.
Another great thing about this Tropical Green Smoothie is that I can get my kids to down this in under 5 minutes. My children won’t eat spinach, which I just don’t get. I love spinach in salads, in soups, sautéed, any way you make it. But I know a lot of kids just aren’t into it for some reason. This smoothie is a great way to get those greens in them. My kids know I put spinach in it and still love drinking it. The apple and pineapple helps to add a nice sweetness to the smoothie that kids love.
I also love giving this to Jack as he is beginning to try new foods. It is the perfect healthy blend of good for you ingredients that any baby would love!
