Baked Chicken Parmesan
I have been craving Italian food a lot lately. For me it has always been one of my go-to comfort foods. Chicken Parmesan is high on my list when eating Italian style food. When I saw a recipe for Baked Chicken Parmesan on one of my favorite food blogs Skinnytaste I knew I had to try making it.
I think I mentioned this before, but I cook meals for a group of my friends each week. It gives me the chance to try new recipes, help them out by cooking them healthy dishes and even forces me to prepare meals for my family ahead of time as well.
Baked Chicken Parmesan was one of the meals I cooked for my friends a few weeks ago. Everyone loved it! The recipe is really simple to make and can be topped with a homemade pasta sauce or your favorite store-bought version. I like to try different cheeses but for this recipe I used parmesan and mozzarella. I think any mild, freshly shredded cheese would work great. I topped my finished dip with freshly chopped parsley and basil and put it over pasta. For an even healthier dish use whole wheat pasta!
Italian inspired recipes hold a special place in my heart. I always loved Italian food, but after visiting Italy a few years ago, I fell even more deeply in love with their fresh ingredients, bold flavors and vibrant culture. Whenever I make Italian food at home I am reminded of my time there and how much I loved it.
One of the things on my bucket list is to one day return to Italy and attend a cooking school for a couple of weeks. I am thinking that dream will have to wait a while, but in the meantime I will work on perfecting the flavors at home in my own kitchen.
When making this recipe you can use a variety of breadcrumbs. I used whole wheat breadcrumbs, but you could use regular or panko breadcrumbs for extra crunch. If you use seasoned breadcrumbs you can leave out the dried basil and oregano, since the seasoned breadcrumbs will already have spices in them.
The nutrition facts do not include pasta.

I've been having the same craving. It's been such a long time since I've made it and I used to make it all of the time. Now that the weather is turning warmer we do more grilling but I'm definitely making Chicken Parmesan -- you've put the idea in my head and I won't be able to get rid of the notion until I make it.
