This Carrot Smoothie is a sweet, nutritious smoothie that is easy to make. Your kids will love this one with the touch of sweetness from coconut. It makes a great snack or drink for breakfast.

CARROT SMOOTHIE 

Today’s Carrot Smoothie is for my adventurous smoothie lovers.  

I don’t think you have to be super adventurous to try this smoothie, but I know some people hear carrot in the title and immediately rule it out.  

Think again.

This smoothie has the earthy flavor from carrot mixed with the sweet flavors from the bananas, pineapple and shredded coconut.  

The yogurt helps to make this smoothie creamy and adds extra calcium to your day.

The inspiration for this smoothie started from our frequent trips to Aladdin’s Eatery in our town.  

Lebanese food is a big part of my diet and the recipes I make for my family, but I have to admit that sometimes I want to go out to eat and have someone else cook.

When you are home with two crazy toddlers all day, and your job involves cooking and recipe testing, there are nights when making dinner just isn’t going to happen.

 Aladdin’s is my go to place for a healthy meal and the menu has a lot of choices to pick from.

Coconut Carrot Smoothie

My kids love to order hummus, pita, grilled chicken, fruit and jasmine rice when we go, but that means that there are no vegetables on their plate.  

It is important to me that my kids get a serving of vegetables at lunch and dinner and smoothies can be a good way to do that.  

Don’t get me wrong, nothing beats eating the actual vegetables in their original form, but smoothies can be good helpers for those picky eaters or situations where there aren’t vegetables available.

The smoothie list at Aladdin’s is long, but this is one of my favorite ones by far.

Coconut Carrot Smoothie

The version of this Carrot Smoothie at Aladdin’s doesn’t involve any coconut.  

That was my brilliant little toddlers idea. 🙂

We made this smoothie a few times while I was testing out different fruits to add in and he suggested that we add coconut.

The kid is a coconut addict.

I will agree that it compliments this smoothie well and adds a nice sweetness. Gotta love those creative little minds!

We like to make this smoothie as a snack during the afternoon or you could easily make this for breakfast to go with a small bowl of oatmeal.

 My whole family goes crazy for this Carrot Smoothie and it makes me happy that it packs so much nutrition in a small glass.

Carrot Smoothie

Carrot Smoothie is a sweet and nutrition packed smoothie with beta carotene, potassium and calcium.

Ingredients 

  • 1 cup low fat yogurt
  • 4 carrots, peeled and chopped into chunks
  • 2 bananas, peeled
  • 1 cup pineapple , frozen
  • 2 Tablespoons shredded coconut , {more for garnish}
  • 2 teaspoons honey , {or other sweetener} more or less to taste
  • 2 teaspoons chia seeds, {optional}

Instructions 

  • Put the ingredients into the blender in the order they are listed. Blend on high until smooth, making sure to blend it long enough to puree the carrots.
  • Add more or less sweetener to taste and garnish with additional shredded coconut.

Notes

  • This smoothie makes one large smoothie or two small.
  • Make sure that you really blend this smoothie up well to get that carrot broken down. I use a blendtec blender which works great, but feel free to use any blender as long as it is powerful.

      It definitely is packed with vitamins from the carrots. I love carrots raw too but sometimes it is nice to get them in a different form. Hope you like this!
