Who needs take-out when you can make this Easy Green Curry Chicken at home? This Thai dish is packed with chicken and vegetables that are cooked in a rich green curry coconut sauce.
EASY GREEN CURRY CHICKEN
I am here today to tell you that you can forget take-out this week now that you have this Easy Green Curry Chicken recipe. This is better than take-out and it isn’t a difficult recipe to make. I
have been making this dish for years now and have been wanting to share it with you guys but it kept getting pushed to the back burner.
There is something so warming and comforting about green curry paste mixed with coconut milk.
In my house Mike is my main taste tester and then of course my kids try everything I make but they can be a bit picky to it usually ends up being Mike that I rely most on.
With this Easy Green Curry Chicken dish I was curious what Mike would think about it. He likes some of the Thai inspired dishes I make but is never as excited about them as I am.
That might be because Thai food is one of my favorites to eat.
If I have a choice in take-out the choices are usually Thai food or Middle Eastern food.
When I make this dish I serve it over basmati or jasmine rice with some naan bread to soak up all the juices as we eat the dish. Mike took two bites of this dish and told me he absolutely loved it.
I have to agree with him. This dish is one of those that you will crave time and time again.
The fresh vegetables, the rich, creamy green curry sauce and the fresh herbs just make this dish an overall winner.
When I make this dish I add 3 Tablespoons of the green curry paste but you can always add 2 for a bit less of the curry flavor or more if you like it really rich with flavor.
As you will see below there are ways to customize this dish, especially if you are vegetarian or want a meatless meal.
Just remove the chicken and add more veggies and even some chickpeas.
This dish works great with chickpeas in my opinion.
Here are some ways you can customize this dish:

If you want to make this meal vegetarian leave out the chicken and add in more veggies and maybe some chickpeas.

You can throw in whatever vegetables you have on hand. I like zucchini, green beans and broccoli when I have them.

If you like spice feel free to add the red chiles, jalapeños, crushed red pepper or hot sauce.

For those that like adding zoodles into their dishes this would be a fun dish to do that with.
Easy Green Curry Chicken
Who needs take-out when you can make this Easy Green Curry Chicken at home? This Thai dish is packed with chicken and vegetables that are cooked in a rich green curry coconut sauce.
Ingredients
For the Green Curry Chicken:
- 1 cup basmati rice
- 2 Tablespoons olive oil
- 1 pound chicken breast, cubed
- 1/4 of a sweet onion, diced
- 3 garlic cloves, minced
- 1 bell pepper, seeds removed, chopped
- 3 Tablespoons green curry paste
- 2 teaspoon grated ginger
- 1 – 14 ounce can coconut milk, divided {you can use light if you want}
- 1 Tablespoon fish sauce
- 1 cup bok choy {or greens of your choice}
- 1 cup matchstick carrots
- 3/4 cup snow peas
- 1 lime, juiced
Garnishes:
- Fresh cilantro
- Green onion, chopped
- Basil leaves, chopped
- Red chiles, diced
Instructions
Heat the 2 Tablespoons olive oil in a large skillet over medium heat. Add the onion and sauté for 2 minutes. Add in the garlic and sauté for 2 more minutes. Add the bell pepper and chicken and sauté for 3 minutes.
Add the green curry paste, ginger, coconut milk and fish sauce and simmer for 10 minutes or until the chicken is done.
Add the bok choy, carrots and snow peas and simmer until the bok choy is wilted. Remove from the heat and add the lime juice and stir.
Serve on top of rice and garnish with cilantro, basil, green onion and red chiles {optional}.
