Easy Pumpkin Muffins are a healthier take on your favorite pumpkin muffins using Greek yogurt and whole wheat flour.  You can feel good feeding these to your family and kids.  Enjoy these as a snack, at a brunch or with your favorite cup of coffee.  

Easy Pumpkin Muffins

These Easy Pumpkin Muffins are my first fall recipe of the season and it makes me happy.  Even though my kitchen is feeling very fall, our Ohio weather sure isn’t.  Labor Day weekend was in the 90’s and it felt like 4th of July weekend but my mind is still moving to fall.  When I started thinking about fall recipes to share with you guys I realized I haven’t shared nearly enough pumpkin recipes.  I love pumpkin and use it a lot but for some reason I haven’t created many here on A Cedar Spoon, and that is about to change.

Easy Pumpkin Muffins

Today’s Easy Pumpkin Muffins are a great place to start if you love pumpkin.  These are so easy to make and can be prepped in 10 minutes, bake in under 20 minutes and are great eaten warm with a cup of your favorite coffee.  These muffins are a favorite with my kids too.  They like to eat them for an afternoon snack once in a while and I feel good about letting them have one of these delicious little fall treats.  These muffins use Greek yogurt {or you can use plain yogurt} and whole wheat flour which helps to create a healthier version of your favorite treat.

If you are ready to move into fall with me, these are definitely a great place to start, easy, and they taste delicious.  Sometimes if I can sneak a few of these into my freezer I will hide them for later.  Just wrap the individual muffin in plastic wrap, throw the muffins into a large ziplock bag and freeze for later. When you are ready to eat the muffins microwave the muffin for 1-2 minutes and enjoy!

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1 cup packed brown sugar
  • 3/4 cup canned pumpkin puree
  • 3/4 cup Stonyfield Plain Greek Yogurt {or you can use plain yogurt}
  • 1 large egg
  • 1 Tablespoon vegetable oil

Instructions

  1. Preheat the oven to 350 degrees. Grease the muffin tins with nonstick cooking spray or use muffin tin liners.
  2. In a medium mixing bowl, whisk the flour, baking soda, cinnamon, allspice, nutmeg and salt until combined. Set aside.
  3. In a mixer beat together the brown sugar, pumpkin, yogurt, egg and oil for 2-3 minutes on high, until frothy.
  4. Make a small well in the center of the dry ingredients and pour the pumpkin mixture. Using a large spoon mix until just combined.
  5. Spoon the batter equally into the muffin tins.
  6. Divide the batter equally among the prepared muffin cups.
  7. Bake for 20 minutes, or until a toothpick comes out clean.
  8. Cool the muffins on a wire rack for 15 minutes before removing.

Haha, I feel the same way. I'm ready for fall and I even made some pumpkin muffins today too! But it is still so hot here. so I am enjoying my pumpkin muffins in the air conditioning pretending like it is cold outside! These look great and I love how easy they are!

Thanks Izzy! It is in the 80's here again but I know any day the weather will flip and it will be freezing! That is how the Midwest works. :) These are so easy and make a great fall snack.

I'm so ready to move into Fall with you! I drank my first pumpkin spice latte today, which basically means Fall is here. I love pumpkin muffins, and these look so delicious and healthy! Time to stock my cupboard with canned pumpkin!
