I realized recently that I really don’t have as many pumpkin recipes on my website as I should. Today I am adding another recipe to the pumpkin archives with this Easy Pumpkin Oatmeal filled with warm fall flavors. 

We love pumpkin this time of year in my house and we make a lot of things with it. You might remember when I recently shared this Pumpkin Pie Dip with you guys that makes a nice snack or dessert. 

I was thinking about what other recipes I like to eat pumpkin in them and oatmeal came to mind. Oatmeal is a great way to start the day and adding unique, extra ingredients to the oatmeal helps keep things interesting, like pumpkin!

  • Pumpkin: If you have fresh pumpkin on hand I suggest making that to use in your oatmeal. If you don’t feel free to use pumpkin puree {not pumpkin pie filling}. To make the pumpkin you will boil the chopped pumpkin in milk for about 15 minutes or until the pumpkin is fork tender. 
  • Oats: This recipe uses regular oats. Oats are a healthy way to start your day! If you want to use steel cut oats you can but the cook time may vary and you may need to add a bit more milk in order to get the right texture. 
  • Milk: I like to use 2% milk in this oatmeal but any milk works great. You can also use coconut milk, almonds or soy milk which all work nicely! 
  • Spices: Pumpkin oatmeal isn’t complete with pumpkin pie spice. You can find this blend of spices in the spice section at your store. It is great to have on hand for things like Pumpkin Muffins and Pumpkin Spice Latte

How do I make Pumpkin Oatmeal

In a small saucepan over medium heat combine the milk and pumpkin. Cook for 15 minutes or until the pumpkin is fork tender.

With the help of an immersion blender process the pumpkin and milk until combined. Add the oats, maple syrup, pumpkin pie spice, vanilla extract and salt to the milk and pumpkin mixture.

Continue cooking for 8 minutes or until thickened. Remove from heat and serve with granola, yogurt or any topping you like.

What Toppings to Put on my Pumpkin Oatmeal

The toppings can add so much flavor and health benefits to your oatmeal. Here are some of my favorites:

  • Granola: Add your favorite granola as a topping or try making your own with my Homemade Granola Recipe
  • Nuts and Seeds: Try walnuts, almonds or pumpkin seeds
  • Yogurt: I especially like adding Greek yogurt to my oatmeal for extra protein and tangy flavor. 
  • Dried Fruit: If you like dried fruit that can be a nice addition to oatmeal. Try dried cranberries, raisins or even cherries. 
  • Fresh Fruit: Fruit is always a great addition to oatmeal. With today’s oatmeal I especially love bananas.

Easy Pumpkin Oatmeal

Ingredients 

  • 3 cups milk, I like to use 2% but any works
  • 1 cup pumpkin, diced or 1/2 cup pumpkin puree
  • 3/4 cup oats
  • 1/2 cup maple syrup , or honey
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch salt

Instructions 

  • **If you are using pumpkin puree skip the first step and just add the milk to a pot. **
  • In a small saucepan over medium heat combine the milk and pumpkin. Cook for 15 minutes or until the pumpkin is fork tender.
  • With the help of an immersion blender process the pumpkin and milk until combined.
  • Add the oats, maple syrup, pumpkin pie spice, vanilla extract and salt to the milk and pumpkin mixture.
  • Continue cooking for 8 minutes or until thickened.
  • Remove from heat and serve with granola, yogurt or any topping you like.

Notes

  • I highly recommend you dice the pumpkin in smaller pieces so it cooks faster.
  • I love my oats THICK so I cooked them for 8 minutes stirring constantly. You can cook them for a little bit less time if you want yours more runny.
