This Easy Tomato Salad uses end of summer tomatoes mixed with salty capers, creamy feta cheese, fresh parsley and mint, green onions and is tossed in a lemony sumac dressing. I love making this and serving on the side of grilled meats, adding it to hummus or rice bowls or adding it to pitas or wraps.

The end of summer is here and my garden is producing a lot of tomatoes. In my opinion garden tomatoes are the best tomatoes. My kids help me with the garden so the tomatoes are truly made with love. 

Today’s Easy Tomato Salad mixes simple ingredients. I am always looking for ways to ripe tomatoes in the summer months and salads are a great way to do just that. If you have farmer’s market tomatoes this is a great way to use those too.

It makes the perfect side dish to many meals including this Air Fryer Cod, Grilled Beef Kofta Kebabs, Mediterranean Baked Turkey Meatballs or this Black Sea Bass Recipe.

  • Vegetables: The vegetables in this salad are ripe summer tomatoes. You can use your favorite variety. It also uses red onion and capers. You do not have to use the capers but they do add a nice savory, salty flavor to the salad and works great with feta cheese.
  • Cheese: The feta cheese is a great addition to the salad. It is creamy and balances the flavors nicely.
  • Fresh Herbs: A mixture of fresh parsley and fresh mint and mixed together in this salad. The fresh herbs are the perfect finishing touch. You also could use fresh basil or fresh dill.
  • Dressing: The dressing is a mixture of extra virgin olive oil, lemon juice, red wine vinegar, garlic and the spice of your choice like sumac or za’atar.

Ways to Modify this Tomato Feta Salad

  • Cheese: While feta cheese is great in this salad you can leave it out or try goat cheese. 
  • Tomatoes: Instead of fresh tomatoes try using these Oven Roasted Tomatoes or these Marinated Tomatoes in this salad.
  • Beans: Beans are another great addition. I like to try chickpeas, white beans, black beans or red beans. 
  • Protein: I also really enjoy adding meats like salmon, shrimp, chicken or steak to this salad. 
  • Vegetables: Extra vegetables are always a nice addition. Try bell peppers, zucchini, radish, carrots or celery. 
  • Olives: I am a big fan of olives and love them in salads. Try adding kalamata or green olives.
  • Greens: Adding greens into this salad is a nice healthy addition. Try arugula, romaine, swiss chard or spinach.

How to Make a Tomato Salad

Step 1: Mix Together Salad Ingredients: In a large bowl add the tomatoes, red onion, capers, feta cheese, fresh parsley, mint and green onions.

 Step 2: Create Dressing: In a mason jar mix together the olive oil, lemon juice, red wine vinegar, garlic, sumac, salt and pepper and mix well.

Step 3: Add Dressing: Pour half of the dressing over the salad and lightly toss. Taste and add more dressing. Serve right way.

Storage Tips

Store this salad for up to 4 days in an airtight container. You might want to add more dressing when you eat the leftovers.

Ingredients 

  • 4 to 5 medium tomatoes
  • 1/2 small red onion, sliced
  • 2 ounces capers, drained
  • 5 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 4 green onions, white and green parts chopped

For the dressing:

  • 1/4 cup olive oil, extra virgin
  • 1/2 lemon, juiced
  • 2 teaspoon red wine vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon sumac , {or spice of your choice}
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions 

  • In a large mixing bowl add the tomatoes, red onion, capers, feta cheese, parsley, mint and green onions.
  • In a mason jar mix together the olive oil, lemon juice, red wine vinegar, garlic, sumac, salt and pepper and mix well.
  • Pour half of the dressing over the salad and lightly toss. Taste and add more dressing. Serve right way.

Notes

  • Storage: You can store this in an airtight container for up to 2 days but I will say that this salad is best the first day. I find the tomatoes start to get soft and there is a lot of access water in the salad. You can drain the water and add more dressing when you are ready to serve the salad.
  • You can make this salad using cherry tomatoes or any variety of tomato you like.
  • This salad is customizable to what you have on hand. Some other ingredients that are nice in this salad are artichokes, roasted red peppers, cucumber or bell pepeprs.
