Mediterranean Antipasto Skewers are always a crowd pleaser at a party. They are colorful and offer your guests a wide variety of flavors and textures; from the turkey to the olives, to the fresh mozzarella balls. These are sure to brighten up any holiday spread!

Has Thanksgiving crossed your mind yet? Somehow Thanksgiving crept up on me this year. The other day I realized it is only a few weeks away and I had a moment of panic. I had to remind myself that with a little menu planning we can all feel prepared for the big gathering. So far I have this Herb Butter Roasted Turkey on the menu.
If I know one thing about Thanksgiving it is the fact that appetizers are important. They are not only appreciated by your guests but also by the cooks.
As you put together your menu this year these Mediterranean Antipasto Skewers are always a colorful, satisfying addition to your spread along with these Smoked Salmon Cucumber Appetizer Bites and this White Bean Artichoke Dip. Recipe Ingredients

- Turkey: I like to use deli turkey breast but you can use any deli meat you like. Try to get a thinner sliced meat because it rolls more easily.
- Vegetables: Pepperoncinis, artichoke hearts, roasted red peppers, olives and tomatoes are added to these skewers.
- Cheese: Mozzarella cheese balls are added to these antipasto skewers. You also can sub in diced cheese instead.
Ways to Modify These Antipasto Kabobs
- Olives: You can leave the olives off of these easy antipasto skewers or use any variety you like. Sometimes I like using cheese or pimento stuffed olives or black olives.
- Cheese: If you don’t want to use fresh mozzarella try cubed cheese like pepper jack, cheddar or mozzarella.
- Meat: I added salami but you could use pepperoni, turkey, ham or prosciutto.
- Herbs: Fresh herbs that work great with these are basil, parsley, mint, oregano or thyme. I like to add the basil to the skewers and then I chop the remaining herbs and sprinkle them on the finished skewers.
- Vegetables: You can add other vegetables to these like artichoke hearts, pepperoncini peppers, chunks of bell peppers, cucumbers or zucchini.
- Dressing: Use your favorite dressing as a finished touch to drizzle over these. I like Italian dressing, balsamic vinegar or a lemon dressing. These also taste great without any dressing. I perfect balsamic glaze the most!

Storage Tips
You can store the kabobs in an airtight container for up to 3 days. You can also add a bit more dressing when you serve them again.

Mediterranean Antipasto Skewers

Ingredients
- 1 pound Turkey Breast, cut and rolled for each skewer
- 16 ounces pepperoncinis, whole
- 12 ounces artichoke hearts, cut in half
- 16 ounces roasted red peppers, cut into chunks
- 20 cherry tomatoes
- 20 olives, pitted {whatever color you would like}
- 8 ounces mozzarella balls, fresh
- 1 cup basil, torn into smaller pieces
- parsley
Instructions
- Lay out 10 skewers on a large cutting board. Start with the first skewer and alternate the ingredients starting with a cherry tomato, followed by the mozzarella cheese, basil, an olive, the turkey, a pepperoncini, roasted red pepper, artichoke and finish the skewer with the same ingredients until you have a tomato on each side.
- Garnish with fresh parsley and serve or keep in the refrigerator.
Notes
- Feel free to use whatever pattern you would like for creating the skewers. I do like to start and end with the cherry tomatoes because I think they hold everything together nicely. I also like to try and alternate colors throughout the skewer.

What wine would you pair with this beautiful appetizer?
I love white wines with this, like pinot grigio or savignon blanc but you also could do a light red wine. If you like a sweeter wine try reisling with it. Enjoy!
