School is back in session! Are your kids excited? I know a lot of parents that get excited to get back into the school year routine.

Will is starting Pre-K this year and taking the bus. I have to admit that it was a little bittersweet watching him board the bus for school. They grow up so fast! He actually turns 5 years old this weekend..where does the time go?

Since we are in the busy back-to-school season I am excited to be partnering with The Ohio Beef Council to share a quick and easy dinner or lunch idea that your whole family will love.  Mexican Pizza is packed with your favorite flavors along with protein and calcium. This school year, thousands of families across Ohio will buy beef. Ohioans spend $4.1 billion each year on beef, which is a healthy, high-quality protein choice. A 3-ounce serving of beef (about the size of an iPhone) provides more than 10 essential nutrients and half the daily recommended value of protein for less than 150 calories.  Making a Mexican Pizza for your child’s lunch or dinner will help give them the protein they need to fuel their day!

Protein helps keep kids full and focused during the school day, and the B vitamins in beef provide students with energy to do their best. Protein is also one of the most satisfying nutrients, so it helps control snacking throughout the day.  Lean beef is an important part of a healthy diet for kids. Research shows that including lean beef daily as part of a healthy diet can help lower cholesterol levels, and exercise is more effective when paired with a high-protein diet.  If you have athletes in your house, protein is especially important! For student athletes and active kids, there is no better choice than beef. The protein in beef helps build muscle and strong bodies.

If you are like me, you probably like to prep your meals ahead of time to make dinner time a breeze. When making Mexican Pizza for your family you can easily prep ahead of time by cooking your beef and chopping all of the garnishes you will be using. Once it is time to make the pizzas you will just have to assemble everything, bake them for 10 minutes and feel good knowing you just got a meal on the table in less than 20 minutes!

I think this cilantro rice would be a great side dish for a Mexican Pizza along with this Simple Roasted Broccoli. These Mexican Pizzas also make a nice, quick lunch. If you have leftovers from the night before just reheat them in a skillet until the cheese is melts and the pizza is heated through.

I am a taco lover. We like to make tacos at least once a week in my house but Mexican Pizza night is a nice change once in a while. If you love Mexican food, this is the recipe for you! I used refried black beans in this recipe but you can use whatever refried bean you like. I like using sharp cheddar cheese when making these pizzas but you can use a variety of cheese options, like pepper jack or a Mexican blend. When it comes to garnishes I use chopped tomatoes, green onions and cilantro, but once again these are very customizable, so use whatever your family likes.

As we are in the crazy first few weeks of school this recipe is one to have on hand. I don’t know about you but I am all about quick and easy dinners and lunches that I can whip up in under 30 minutes.

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Mexican Pizzas are the perfect back-to-school dinner for your family that is easy to make, packed with flavor and a kid and adult favorite. Packed with protein and calcium, you can feel good putting this meal on your table!

Ingredients

  • 2 teaspoons olive oil
  • 1 lb. ground beef {I used 80/20 but feel free to use whatever you like}
  • 1/4 cup water
  • 1 packet of taco seasoning {or use a homemade taco seasoning}
  • 1 - 16 oz. can refried black beans {I had leftovers that I saved for another meal}
  • 1/2 cup salsa of your choice
  • vegetable oil, or cooking spray
  • 10 flour tortillas {I used taco size}
  • 1 - 10 oz can red enchilada sauce {I used about half the can and saved the rest}
  • 8 ounces sharp cheddar cheese, shredded

Garnishes:

  • Green onions
  • Fresh cilantro
  • Chopped tomatoes
  • Sour cream

Instructions

  1. Preheat the oven to 350 F.
  2. In a large skillet heat the 2 teaspoons olive oil over medium high heat. Add the ground beef and cook until the beef is browned and cooked through. Add 1/4 cup water and the packet of taco seasoning or if using a homemade taco seasoning add 2-3 Tablespoons of that seasoning instead. Turn the heat to medium and simmer until the water is mostly absorbed, stirring frequently. Remove from the heat, drain the excess fat and set aside.
  3. Spray a large skillet with cooking spray and heat over medium heat. Add each tortilla to the skillet and let cook on each side for about 1 minute to help the tortillas crisp. Place half of the tortillas on a plate and the other half arrange in a single layer on a non-stick baking sheet.
  4. Spread a layer of refried black beans on each tortilla on the baking sheet followed by salsa. Next sprinkle the ground beef over the refried black beans followed by a sprinkling of cheese on each. Place the other tortilla on top of the tortilla on the baking sheet. Using a spoon spread a thin layer of enchilada sauce on each Mexican pizza, followed by another sprinkling of cheese.
  5. Bake in the oven for 10 minutes, or until the cheese is bubbling.
  6. Garnish with freshly chopped tomatoes, green onion, cilantro and sour cream or garnishes of your choice.

Notes

You can use refried beans of any sort. I like the refried black beans because I feel like it is a bit healthier.

Add whatever garnishes your family likes.

Try using a variety of cheeses, like pepper jack or a Mexican blend.
