ROASTED BROCCOLI
My kids love broccoli but I know that isn’t the case for all kids, or even adults for that matter.
They especially love this Roasted Broccoli recipe and I love that it is a healthy side dish.
No matter what camp you fall into today’s this roast broccoli dish could be a game changer for some of you!
When I started roasting broccoli a few years ago I fell in love. This is hands down the best way to make broccoli and it uses a few simple ingredients.
Roasted vegetables are my favorite like this Easy Parmesan Roasted Cauliflower, these Simple Roasted Vegetables or these Za’atar Roasted Carrots.
Roasting vegetables really brings out the sweet, rich flavors of many vegetables and broccoli is so exception.
When I say this stuff is addicting, I am serious!
When I made a batch of this broccoli to photograph for my blog, Drew and I sat at the table afterwards at 10 am and ate the bowl of broccoli between the two of us. Is that weird? 😉
Well that is the life of a food blogger, and when something tastes as good as this broccoli you can’t blame us.
I love that Drew couldn’t stop eating it!
I am all about healthy snacking in my house and there is not better way than finding a vegetable they are willing to eat at 10 in the morning.
This Simple Roasted Broccoli is the perfect side dish to your main dish on a busy weeknight.
If you want to mix this one up try adding a drizzle of balsamic to the sheet pan broccoli after you are done roasting or even adding a squeeze of lemon juice.
HOW DO YOU ROAST BROCCOLI?
You will want to wash and dry your broccoli about an hour ahead of the roasting process to make sure as much moisture is out of the broccoli as possible.
Once you are ready to roast your broccoli you will want to chop it into pieces and place in a large bowl.
Then toss with olive oil, minced garlic, salt and pepper and any additional spices you like.
Once the broccoli is done roasting serve right away.
TIPS FOR MAKING ROASTED BROCCOLI
FRESH BROCCOLI: You will want to use fresh broccoli as I find that frozen broccoli has too much excess moisture for roasting.
MOISTURE: Make sure you wash and let the broccoli sit for about an hour to get the moisture out of the broccoli. This helps with the roasting process.
SPICES: This recipe is a great canvas for spices like red pepper flakes, Italian seasoning, thyme, oregano, basil or even za’atar.
LEMON: Sometimes I like adding a few squeezes of a lemon or lemon zest. It adds a bit of sweetness and citrus flavor to the broccoli.
HERBS: Fresh herbs are a nice way to finish off this broccoli. Try fresh parsley, oregano or thyme.
CHEESE: You can beat a little cheese on a vegetable. Try sprinkling Parmesan cheese, adding feta or goat cheese to the finished fish.
SAUCE: You can drizzle a sauce over the finished roasted broccoli. I especially love this Creamy Dill Sauce, Tahini Sauce or this Tahini Yogurt Sauce.
IS ROASTED BROCCOLI HEALTHY?
WHAT SHOULD I SERVE THIS BROCCOLI WITH?
SALAD: Salads are always a great pairing with broccoli. I really like this Mediterranean Bean Salad, Lemon Arugula Salad with Pine Nuts, Summer Orzo Pasta Salad or this Easy Lebanese Salad.
SIDE DISHES: Other sides that pair with broccoli are Lebanese Green Beans, Turmeric Roasted Cauliflower or these Mediterranean Roasted Vegetables
POTATOES: Another great addition alongside broccoli is potatoes. I often make Gouda Smashed Potatoes, Air Fryer Twice Baked Potato, Spicy Lebanese Potatoes or Lemon Cilantro Roasted Potatoes. Another great thing to serve this chicken over is Creamy Polenta.

Simple Roasted Broccoli

Ingredients
- 1 head of broccoli {about 4 1/2 cups}, cut into pieces
- 3 Tablespoons olive oil
- 4 garlic cloves, minced
- Salt and pepper
Instructions
- An hour before preparing your roasted broccoli you want to wash and dry it and let it sit out on paper towels to make sure it is completely dry. You don't want to roast the broccoli if it is wet.
- Preheat the oven to 375 degrees F.
- In a large ziplock bag place the cut broccoli, olive oil, minced garlic and a sprinkling of salt and pepper. Shake the bag until the broccoli is fully coated and everything is mixed together.
- Spread the broccoli on a baking sheet and place on the top rack of the oven. Roast for 30 minutes, stirring the broccoli half way through cooking.
- Remove and enjoy warm!

This is quite similar to how we roast our broccoli, or any vegetables, and I agree totally: Roasted broccoli is a wonderful snack as well as a side dish. We sometimes sprinkle toasted sesame seeds over it before eating. We also like to roast a couple of trays of vegetables and keep them on hand in the fridge as fodder for easy week-night suppers or take-along lunches. But the veggies are so good hot from the oven that it's difficult to save much!
