I love the lemon and fresh cilantro in these potatoes! You can make them soft or extra crispy depending on how you like them. These make such a great side dish and the kids go crazy for them in my house.
14. Overnight Coconut Cranberry French Toast Bake
I loved this recipe the first few times I made it so much that I made it for my family on Christmas morning. It was a huge hit! And I just prepped it the night before, put it in the fridge and then woke up and popped it into the oven. Add this to your list of recipes to try for a brunch or holiday breakfast!
13. Cranberry Coconut Oatmeal Cookie Bars
These Cranberry Coconut Oatmeal Cookie Bars are chewy, gooey and oh, so good! I love the combination of the coconut, chocolate and cranberries in these. They are even a little bit better for you then a regular cookie bar so you can have more than one!
12. Strawberry Cantaloupe Smoothie
My kids go crazy for smoothies and they adore cantaloupe so this is a fun smoothie to make for a snack in the afternoon. You can add things like spinach and chia seeds to boost the nutritional power. Who doesn’t love a fruity, bright smoothie to brighten their day!
11. Pumpkin Pie Pancakes
My family has a tradition of making pancakes on most Saturdays. The kids help Mike and I make a big batch and we like to try new variations like these Pumpkin Pie Pancakes. These are a little bit of treat but still pretty nutritious with yogurt, pumpkin and whole wheat flour.
10. Black Bean Dip with Queso Fresco
I am a big fan of dips for parties, snacking and tailgating. I love this Black Bean Dip with Queso Fresco for dipping chips in or spreading on sandwiches and tacos.
9. Buffalo Chicken Hummus Bites
My hummus addiction is real. I created these cute little Buffalo Chicken Hummus Bites using hummus to give it a creamy texture and make them a little bit lighter than the normal buffalo chicken dip. Serve these at a party or when you are watching your favorite football team.
