Peanut Butter Coconut Oatmeal Bites are a bite sized, no-bake snack mixing peanut butter, oatmeal, coconut, chocolate chips and honey. They are so easy to make and great for snacks!

It has been a while since I shared a recipe that my son Will and I have made together.
Today’s recipe for Peanut Butter Coconut Oatmeal Bites are a huge hit with him (and the rest of my household might I add).
We have made these together at least a handful of times and he asks me at least once a week if we can make them again.
These are so simple to throw together and really easy for the little ones to help with.
I saw this recipe on The Chew a few months ago and knew I had to try it with Will.
Will does most of the measuring and stirring with a little bit of help from me.
He enjoys helping me in the kitchen and of course likes helping me eat our creations.
With these Peanut Butter Coconut Oatmeal Bites I put them in the refrigerator for about an hour to make sure they are hard and not falling apart.
You can also freeze an extra batch or any leftovers for later. Just pull one out of the freezer 20 minutes before you are ready to eat it to let it soften.

When I make a batch of these I put half in the refrigerator in an airtight container to eat during the week and half in the freezer.
These are the perfect little snack when you are on the go and need a bit of protein.
The coconut and honey sweeten them nicely making them a great dessert option too.
Another great thing about these little bite sized snacks is that you can vary the ingredients each time you make them.
Try raisins instead of chocolate chips, or dried cranberries.
Maybe use white chocolate chips or agave nectar?
Experiment with these and create your perfect little bite sized snack!

Recipe Ingredients:
- Old Fashioned Oats
- Dark Chocolate Chips
- Coconut Flakes
- All Natural Creamy Peanut Butter
- Honey
- Vanilla Extract
- Chia Seeds
- Flax Seeds
How to Make Peanut Butter Coconut Oatmeal Bites
- In a large bowl, mix together the Oats, Chocolate Chips, and Coconut. Add the Peanut Butter, honey, vanilla and mix well until evenly combined.
- Chill in the refrigerator for an hour then roll out balls about an inch in diameter {use a cookie scoop or your hands}.
- Store in an airtight container in the refrigerator or on the counter. You can also freeze these.

Peanut Butter Coconut Oatmeal Bites

Ingredients
- 2 cups oats, old fashioned
- 1/2 cup dark Chocolate Chips , {or chocolate of your choice}
- 2/3 cup Coconut Flakes, {i used unsweetened but feel free to use sweetened}
- 3/4 cup Peanut Butter, all natural
- 1/3 cup Honey, sometimes I need a bit more to help keep the snack bites held together
- 1 teaspoon vanilla extract
- 1 teaspoon chia seeds
- 1 teaspoon flax seeds
Instructions
- In a large bowl, mix together the Oats, Chocolate Chips, and Coconut. Add the Peanut Butter, honey, vanilla and mix well until evenly combined.
- Chill in the refrigerator for an hour then roll out balls about an inch in diameter {use a cookie scoop or your hands}.
- Store in an airtight container in the refrigerator or on the counter. You can also freeze these.
Notes
- Other options: add raisins, dried cranberries, apricots, white chocolate chips, caramel chips, carob chips.
- Instead of coconut or in addition use ground flax seed.
- Use almond butter instead of peanut butter.
- If the dough seems to dry add a bit more peanut butter and stir until the consistency becomes thicker and can be made into balls.
