Last week I shared a recipe for Balsamic Brussels Sprouts which combines balsamic, brussels sprouts and pomegranate arils. It is a sweet and savory side dish. 

Today I wanted to share a more savory recipe for brussels sprouts with you guys. These are perfect for the winter months and holiday season. They would be great on your Thanksgiving or Christmas table. These Roasted Brussels Sprouts with Bacon is one we often eat at Thanksgiving or Christmas. 

If you are a fan of bacon and crispy brussel sprouts then this recipe is for you. It uses 4 simple ingredients: brussels sprouts, bacon, olive oil and garlic. This dish couldn’t be easier to make and your holiday table will be happy you did.

This is such a great side dish for a meal or the holidays. Here is why we love it:

Easy Recipe: This brussels sprout recipe is one of the easiest sides you can make! It mostly involves some chopping and then your oven does all of the work. They are great for those busy holiday meals!
Savory: This recipe is rich with incredible flavor from the crispy bacon. I love the texture and the flavor that the bacon adds to the brussels sprouts. You can even add some parmesan cheese or a balsamic glaze at the end of roasting for extra flavor! This is my favorite way to make brussels sprouts.
Perfect for the Holidays: When I come up with my holiday menu I love adding this simple side dish to my holiday dinners alongside my main course, salads and other sides. It really is a perfect side dish that is popular!

You will love this easy recipe and the simple ingredients it uses. It is one of my favorite recipes! 

  • Brussels Sprouts: When you buy brussels sprouts at the store you will find them in the produce section. Some stores sell them loose or you can buy them prepackaged. Once you are ready to make this recipe you will want to trim the stem off and slice them in half. You will also want to remove any wilted or loose leaves on the outside.
  • Bacon: Bacon makes a really nice pairing to brussels sprouts. It adds a savory flavor and a nice texture. You can use regular pork bacon or even turkey bacon. Don’t skip the salty bacon as it adds so much flavor.
  • Garlic: I am a big fan of adding garlic to brussels sprouts for extra flavor. You can easily leave this out if you want or add more if you want.

How Do You Make This Brussels Sprouts and Bacon Recipe

Preheat oven to 425 degrees F.

Step 1. Mix All Ingredients: In a large bowl mix together the halved brussels sprouts, bacon and garlic and spread evenly in a single layer on a non-stick large baking sheet or sheet pan. Sprinkle with salt and pepper.

Step 2. Bake Brussels Sprouts: Place on center rack in preheated oven and roast 25 to 30 minutes, stirring occasionally, until bacon is crispy and the brussels sprouts are golden brown and started to caramelize. You want to make sure you have crispy brussels sprouts.

Step 3. Serve Warm: Adust salt and pepper to taste. Serve warm.

Store the brussels sprouts in an airtight container for up to 5 days. You can reheat in the oven slowly at 300 degrees or an air fryer.

Store leftover Brussels sprouts in an airtight container for up to 4 days. To reheat you can heat in the oven or air fryer.

What to Serve With Brussels Sprouts

  • Herb Butter Roasted Turkey: At Thanksgiving we like to make turkey. This is my favorite recipe for a moist, flavorful turkey. It pairs wonderfully with the brussels sprouts. 
  • Slow Cooker Mediterranean Whole Chicken: Pomegranate is an ingredient often found in the Mediterranean diet. It pairs so well with the flavors of that region. This slow cooker chicken would be a nice pairing. 
  • Baked Cod with Lemon: This lemon cod is flaky, light and so sweet. It pairs really well with the brussels sprouts.
  • Slow Cooker Pot Roast: In the cold months I just adore tender pot roast. It is such a nice combination of savory, sweet and warm flavors.

Ingredients 

  • 1 pound brussels sprouts, rinsed, trimmed and cut in half
  • 1/2 pound bacon, chopped
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions 

  • Preheat oven to 425 degrees.
  • In a large bowl, mix together brussel sprouts, bacon, olive oil, garlic and Italian seasoning and spread evenly on a non-stick baking sheet. Sprinkle with salt and pepper.
  • Place on center rack in preheated oven and roast 25 to 30 minutes, stirring occasionally, until bacon is crispy and brussel sprouts have started to caramelize. Adjust salt and pepper to taste. Serve warm.

    These were GREAT! i used 4 slices of thick cut bacon instead of the 6 pieces of regular bacon and it worked out perfectly ? Thank you for the recipe!
