These Slow Cooker Shredded Pork Tacos are on part of our taco rotation now. They are so tender, juicy and were a big hit in my house.

Taco night doesn’t just happen on Tuesday in our house. It is a favorite among my kids and my husband, but especially me.
The nice thing about all of those slow cooker recipes is that the shredded meat is so versatile. You can use that chicken, beef and pork in so many ways from tacos, to quesadillas, to salads to burrito bowls and the list goes on. The meat also freezes really well so you can keep half for later.
Now that the holidays are in full swing my life has been crazy and I know a lot of others are feeling the same way. I have been baking tons of cookies for a variety of parties, gifts and get togethers which means by the end of the day the last thing I want to do is cook a big dinner from scratch.
That is where the slow cooker comes in. During the busy holiday season it is a life saver for me. I like to get up in the morning, put the recipe in the slow cooker and go about my day. These Slow Cooker Shredded Pork Tacos take under 10 minutes to prepare.
HOW DO YOU MAKE PORK TACOS?
- You start by rubbing salt and pepper on the pork tenderloin and placing it in the slow cooker.
- In a large bowl combine the remaining ingredients, pour it over the pork tenderloin and set the slow cooker to cook while you go about your day.
- I like to cook mine on low for 6-8 hours because I feel like slow cooking should be just that, slow. But if you are strapped for time you can cook it on high for 4-5 hours and it will turn out great as well.
- When the pork is done cooking just use two forks to shred it, return it to the slow cooker, give it a stir and let it cook for 30 more minutes to let those juices soak in.
