Spiked Raspberry Lime Coconut Water

Summer is in full swing and I love it!

Memorial Day weekend was beautiful in Chicago and involved a few 85 degree days. We spent a good portion of the weekend outside enjoying the weather and grilling out.  My bartender husband was back at it again and created this Spiked Raspberry-Lime Coconut Water cocktail to sip on.  It is a winner for sure!

Coconut water is a great addition to drinks offering a bit of sweetness that pairs wonderfully with lime juice and the raspberry flavor.  We garnished our cocktails with fresh coconut which was a fun way to add some texture to the drink.

Many of us that live in Chicago feel that we have to take full advantage of warm weather months because we suffer through a pretty brutal winter each year.  At the end of winter I always say that I am going to spend as much time outside as possible once it warms up.  If you ever wondered why us crazy Chicagoans put up with the cold polar vortex — summer is the reason. There is no other city like Chicago in the summer and sipping on a cocktail like this makes it that much better.
