3 EASY CHICKEN MARINADES
When the 4th of July rolls around each year, my favorite thing to do is host a big backyard get together at my house with grilled chicken, pasta salads and fresh grilled vegetables. This year our 4th of July celebration will be extra special because my parents recently moved back to Ohio. After living at least 7 hours away from my parents since high school, they now live within 25 minutes of me.
When I have a backyard get together, grilling Just BARE® chicken is always my go-to when it comes to cooking easy, healthy food for my guests that I know they are going to love. Today’s 3 Easy Chicken Marinades are the perfect way to get an easy, healthy meal on the table that your guests will love. My favorite thing about chicken marinades is that they help hold the flavors in the chicken and create a tender, juicy piece of meat when it is grilled.
The 3 marinades that I shared today offer a variety of flavors depending on what your crowd likes. If you are having a big group over, you could even make a batch of chicken using each of the marinades to give your guests a variety of options to pick from depending on their preferences.
What ingredients do I need for the 3 marinades?

Fresh Lemon Herb Marinade is a light, citrusy marinade using fresh herbs. It mixes together olive oil, lemon juice, basil, parsley, dill, crushed pepper, garlic, salt and pepper. Garnish with fresh parsley

Thai Coconut Curry Marinade is a rich, creamy marinade that uses sweet and savory Asian flavors. It mixes coconut milk, olive oil, ginger, garlic, brown sugar, curry, turmeric, salt and pepper. Garnish with fresh cilantro.

Moroccan Yogurt Marinade uses yogurt as the base and mixes together deep, rich spices. It mixes plain or Greek yogurt, cumin, turmeric, coriander, paprika, cinnamon, garlic, salt and pepper. Garnish with fresh parsley.

These 3 Easy Chicken Marinades aren’t only for summer grilling. These work great for all types of cooking–slow cooker, Instant Pot, the oven or stovetop.

You can put your marinated chicken in the refrigerator for 30 minutes, or ideally overnight. You can also put them in the freezer for up to 3 months. When you are ready to use the chicken in the freezer just make sure to let it thaw out in the fridge overnight before grilling.

When I grill chicken I don’t like to use the marinade that the chicken was in for basting. Basting is when you use some of the marinade to apply to the chicken as it grills giving it added flavor. If you want to baste your chicken during the grill process, make sure to keep a small amount of the marinade separate for this purpose.

3 Easy Chicken Marinades
These 3 Easy Chicken Marinades are full of flavor and perfect for your summer grilling. Each marinade is easy to put together and uses simple, fresh ingredients. These marinades help keep the chicken thighs tender and juicy, while bringing a nice depth of flavor to the meal.
Ingredients
Fresh Lemon Herb Marinade:
- 3/4 cup olive oil
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 Tablespoons lemon juice
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 2 Tablespoons dill, chopped
- 1/4 teaspoon crushed red pepper
- 2 garlic cloves, minced
Thai Coconut Curry Marinade
- 3/4 cup coconut milk
- 2 tablespoons olive oil
- 1 tablespoon finely grated fresh ginger
- 2 garlic cloves
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon brown sugar
- 2 teaspoons curry
- 1 teaspoon turmeric
Moroccan Yogurt Marinade
- 1 cup plain yogurt {I used low fat yogurt but you can use Greek yogurt}
- 2 Tablespoons olive oil
- 1 lime, juiced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 2 teaspoon coriander
- 1/2 teaspoon paprika
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1/8 teaspoon pepper
Instructions
For each of the marinades combine the ingredients in a medium mixing bowl and whisk together. Place the chicken thighs in a large ziplock bag and add the marinade. Ziplock the bag shut and use your hands to massage the marinade into the chicken.
Refrigerate the chicken for 30 minutes, but ideally overnight. You can also freeze the marinaded chicken in the ziplock bag for up to 3 months and then let it thaw in the fridge for one or two days when you are ready to grill it.
When you are ready to grill grill chicken thighs over medium-high heat, about 6 to 8 minutes per side, until done and there is no hint of pink in the meat and an internal temperature of 165°F.
Notes
For the Fresh Lemon Herb Marinade I suggest garnishing with fresh parsley, for the Thai Coconut Curry Marinade I like to garnish with fresh cilantro and for the Moroccan Yogurt Marinade I use parsley to garnish.

These marinade chicken recipes are awesome! I do something similar at home, except that I use yogurt. I also find that marinade tastes especially great when the meat is grilled.
