Hawaiian Chicken Kabobs are a festive, colorful meal that is perfect for your next backyard party. Juicy chicken breasts are marinated in a Hawaiian-flavored sauce and paired with bell peppers, red onion and sweet pineapple. These kebobs are easy and a crowd pleaser!
HAWAIIAN CHICKEN KABOBS
Grilling season is by far my favorite time of year. I love when the weather gets warm and I can throw a meal on the grill and entertain a crowd in my backyard. Hawaiian Chicken Kabobs are the perfect crowd pleasing, summer meal. You have to keep this recipe handy!
Marinating chicken is one of my favorite ways to prep chicken for the grill. It helps to create a tender piece of meat and soaks up all of the delicious flavors. Today’s Hawaiian Chicken Kabobs use a sweet Asian inspired marinade consisting of pineapple juice, soy sauce, ginger, honey, rice vinegar, toasted sesame oil, crushed red pepper, salt and pepper. After you marinate the chicken, pair it with bell pepper, red onion and juicy pineapple and grill to perfection. I don’t know about you, but I love chicken kabobs.
Today’s chicken kabob recipe uses Just BARE Boneless Skinless Chicken Breasts . If you have been following along here at A Cedar Spoon you know that I love Just BARE Chicken for many reasons. By doing this easy prep work all you have to do when your guests arrive is throw the Hawaiian Chicken Kebobs on the grill.
WHAT INGREDIENTS ARE IN THESE CHICKEN KABOBS?
CHICKEN: I used chicken breasts cut into chunks because I feel that the size and thickness works great on the grill.
FRESH VEGETABLES: The fresh, rainbow assortment of vegetables is my favorite. I used red onion and colorful bell peppers. Feel free to add whatever vegetables you want to grill with the chicken.
FRUIT: The pineapple on these skewers is the perfect match for the savory chicken and the sweet Hawaiian style sauce. Grilled pineapple is one of my favorite summer treats!
SAUCE: The Hawaiian style sauce is so tasty! It works great as the marinade for the chicken and vegetables. The marinade uses pineapple juice, soy sauce, honey, rice vinegar, garlic, ginger, brown sugar, sesame oil and crushed red pepper that creates a great combination of flavor.
Hawaiian Chicken Kebobs
Hawaiian Chicken Kebobs are a festive, colorful meal that is perfect for your next backyard party. Juicy chicken breasts are marinated in a Hawaiian-flavored sauce and paired with bell peppers, red onion and sweet pineapple. These kebobs are easy and a crowd pleaser!
Ingredients
For the chicken kebobs:
- 2 to 3 - (14 ounces) Just BARE® Boneless Skinless Chicken Breast Fillets, cut into 1-1/2 inch pieces
- 1/2 green bell pepper, cut into 1-1/2 inch pieces
- 1/2 orange bell pepper, cut into 1-1/2 inch pieces
- 1/2 red bell pepper, cut into 1-1/2 inch pieces
- 1 red onion, cut into 1-1/2 inch pieces
- 3/4 of a pineapple {about 3-1/2 cups}, cut into 1-1/2 inch pieces
- 6 Tablespoons olive oil, divided
For the marinade:
- 1/4 cup pineapple juice
- 1/4 cup soy sauce
- 2 teaspoons honey
- 1 Tablespoon rice vinegar
- 1-1/2 Tablespoons minced ginger
- 3 garlic cloves, minced
- 1 Tablespoon brown sugar
- 1 teaspoon toasted sesame oil
- 1 teaspoon crushed red pepper {optional for spice}
- Salt and pepper to taste
Garnish:
- Freshly chopped cilantro
Instructions
- In a medium mixing bowl, whisk together pineapple juice, soy sauce, honey, rice vinegar, ginger, garlic, brown sugar, sesame oil and crushed red pepper. Taste the marinade and add salt and pepper to taste.
- Pour half of the marinade in a large Ziploc bag and store the other half of the marinade in an airtight container in the fridge. Add the chicken to the Ziplock bag, close the bag and massage the chicken and marinade together. Put the chicken in the fridge for two hours.
- If you are using wooden skewers, soak 10 of them in cold water for an hour. Thread the chicken, vegetables and pineapple onto the skewers, alternating until the chicken is gone. Drizzle 2 tablespoons of olive oil over the skewers.
- Heat the grill over medium high heat. Brush the grill with the remaining olive oil and place the skewers on the grill. Grill for 6 minutes on each side, brushing the refrigerated marinade over the chicken skewers before you turn them over. Chicken should reach an internal temperature of 165°F.
- Serve warm with an extra drizzle of honey and fresh cilantro.
Notes
Feel free to use whatever color bell pepper you like.
Other vegetables you could use include zucchini and mushrooms.
