I must admit I am not much of a baker but I do have certain desserts, cookies and breads that I like to make on repeat each year.

If you come over at the holidays my family always has a batch of Baklava on the table, or a tin of these Peanut Butter Pretzel Chocolate Chip Cookies or a jar of Easy Candied Walnuts.

Today’s Almond Cake Recipe is another delicious and easy dessert to serve at the holidays but also works great year-round. I could see this cake being served at a shower or brunch or at a special occasion with family and friends. It reminds me of a pound cake – not too sweet and perfect with a cup of coffee or tea. 

You will love the sweetness of this Simple Almond Cake Recipe with the toasted, crunchy almonds. If you are feeling adventurous add some fresh berries or a layer of icing.

WHAT INGREDIENTS ARE IN THIS ALMOND CAKE?

ALMONDS: This recipe uses silvered or sliced almonds. I love the flavor that they add along with the crunchy texture. 

GINGER: Fresh ginger adds a nice touch of flavor to this cake. If you don’t have fresh ginger on hand you can substitute dried ginger in its place.

Use 1/4 teaspoon of ground ginger for every 1 tTablespoon of fresh ginger called for in this recipe.

HONEY: The honey brings a natural sweetness to this almond pound cake. You can even drizzle some extra on top of the cake once it is done baking for extra flavor. 

VANILLA OR ALMOND EXTRACT: The vanilla extract also adds flavor to this cake. The better the quality of the vanilla you can get ahold of the better! You can also use almond extract in place or in addition to vanilla for extra almond flavor.

HOW DO YOU MAKE THIS HONEY ALMOND CAKE?

Preheat the oven to 375 F and grease a 9 inch circular baking pan with butter.

In a large mixing bowl, add flour, baking powder, ginger, sugar and salt. Combine all together.

Now add butter, egg, honey, milk and vanilla extract. Mix into a smooth batter.

Pour the batter in a baking pan and sprinkle sliced almonds on it without leaving any empty space.

Bake in the oven for 60 minutes.

Use a skewer or toothpick to see if the middle is cooked through before removing from the oven. The toothpick must come out clean.

Let the cake cool down before slicing and serving. Serve with more honey if desired.

TIPS & IDEAS FOR MAKING THIS EASY ALMOND CAKE RECIPE

  • NUT ALLERGIES: If you there are nut allergies for the people that will eat your cake you can replace almonds with blueberries, sliced pear or sliced apple.
  • CITRUS: For a slight citrus flavor add 1 Tablespoon orange or lemon zest. 
  • HOLIDAY CAKE: If you are making this cake near the holidays you can add ground cloves and cinnamon for a warmer flavor. 
  • VEGAN: Replace honey with maple syrup.. Replace egg with 1 tablespoon baking powder + 2 tablespoons soy milk or use self raising flour + 2 tablespoons soy milk. Replace whole milk with soy milk.
  • TOPPINGS: There are a lot of options for toppings when it comes to this cake. You could add homemade icing and skip the almonds or add the almonds after you ice the cake. You can add a variety of berries like blackberries, raspberry or strawberries.

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 inch fresh ginger, finely chopped

Notes

Replace almonds with blueberries, sliced pear or sliced apple if you have a nuts allergy.
Add 1 Tablespoon orange zest to give the cake extra flavor.
Add ground cloves and cinnamon if you make it in December for a holiday taste.

Make it vegan:
Replace honey with maple syrup.
Replace egg with 1 tablespoon baking powder + 2 tablespoons soy milk or use self raising flour + 2 tablespoons soy milk.

Not sure what happened as I followed the instructions, but 1 hour bake at 375 F yielded a very black and burnt cake. It is an inedible waste of ingredients.

I have never had that happen and I make this all of the time. I am so sorry to hear this. It sounds like your oven baked it at a much quicker speed than any oven I have used.

I honestly have not tried to make it gluten free. This recipe uses all purpose flour so if you have tried to sub out gluten-free flour in place of all purpose before I would follow that same type of substituting. I can try to see if I can make it gluten-free soon and will let you know.
