Do I have any burrito bowl lovers out there? Well today’s Burrito Bowls with Heirloom Bean Veggie Burgers are for you.
I have a deep love for burrito bowls and often set up a big “make your own burrito bowl” bar for dinner.
You line your table with delicious toppings like avocado, chopped tomatoes, romaine lettuce, cheese, guacamole, salsa, corn, beans and let everyone put their favorite toppings over a bowl of rice. Today’s Burrito Bowls with Heirloom Bean Veggie Burgers use coconut-lime rice as the base, your favorite toppings like avocado and corn, along with a Dr. Praeger’s Heirloom Bean Veggie Burger.
If you are having a group of people over for dinner, burrito bowls are the way to go. The nice thing is you have the freedom to offer so many options when it comes to toppings, the protein, the rice and you can even offer a few options for each topping. For example, if you have a gluten-free guest you can also offer quinoa along with the rice. If some people like spice you can offer different salsas from a spicy salsa to a pico de gallo to a salsa verde.
Today’s Burrito Bowls with Heirloom Bean Veggie Burgers use a fun, healthy new product by Dr. Praeger’s. They recently came out with new additions to their popular line of veggie burgers: the Heirloom Bean Veggie Burger featuring six different variety of beans {which I used in today’s burrito bowl and is vegan and gluten-free}, Bibimbap {vegan} with spicy Korean Gochujang and the Mushroom Risotto using truffle oil and Arborio rice {vegan and gluten-free}. These veggie burgers are perfect for a quick weeknight meal or adding to a recipe like today’s burrito bowls.

I am really drawn to their mission of only using recognizable ingredients: vegetables, herbs and grains people know and love. They serve a variety of products that are tailored to dietary restrictions, including gluten-free, vegetarian and vegan. All of their products are OU Kosher certified, and many are Non-GMO Project Verified and certified Gluten Free.
And they cook with high-quality ingredients that include a diverse range of vegetables, sustainably caught fish and plant-based oils. Description
Burrito Bowls with Heirloom Bean Veggie Burgers are an easy vegetarian meal that will fill you up! These are loaded with tasty ingredients including an Heirloom Bean Veggie Burger, avocado and sautéed vegetables all on top of a bed of coconut-lime rice.
Ingredients
Coconut-Lime Rice:
- 1 cup water
- 1 cup brown or white rice
- 1 –15 oz. can of coconut milk, lite {or look for low fat}
- 1 lime, juiced
Sautéed Vegetables:
- 1 red bell pepper, seeds removed, sliced {or try 1/2 green and 1/2 red}
- 1 medium sweet onion, chopped
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- Dash of salt
Toppings:
- 4 Dr. Praeger’s Heirloom Bean Veggie Burgers, chopped
- 1 – 15 oz. can of black beans, drained and rinsed
- 1 –15 oz. can of sweet corn, drained and rinsed
- 1 avocado, pit removed, sliced {or guacamole}
- 1 large tomato, chopped
- 1 cup of shredded sharp cheddar cheese {or cheese of your choice}
- 1 cup salsa of your choice
- 1 cup of fresh, loosely packed cilantro, stems removed, chopped
- Extra lime juice for drizzling
Instructions
- In a large pot bring the 1 cup water, Jasmine rice, coconut milk and salt to a boil. Once boiling cover and turn down to a simmer. Simmer for 20 minutes and then fluff with a fork add lime juice and stir. Set aside.
- Cook the Dr. Praeger’s Heirloom Bean Veggie Burgers according to the package and set aside.
- When you are ready to serve your burrito bowls I like to set out the bowls and all of the ingredients so everyone can make their own. I layer as follows: a layer of coconut-lime rice on the bottom followed by all of the toppings I want and the chopped Dr. Praeger’s Heirloom Bean Veggie Burgers. I then gently toss together everything including the salsa and/or guacamole along with a few drizzles of lime juice.
Notes
These burrito bowls are so customizable depending on your likes. You can use avocado or make guacamole instead. You can use a variety of vegetables including red onion, grilled zucchini, grilled sweet corn and radish.
For the salsa either use your favorite store-bought version or make your own. I like to use a mild pico de gallo along with a medium spicy salsa.
