Today’s Cottage Cheese Baked Eggs are a great option that you can meal-prep on the weekend and heat up during the week. Egg bakes are also works great for lunches or weekend brunch. 

They are easy to freeze for later and use them on those days you need a quick breakfast in the future. 

The nice thing about eating eggs in the morning is that it is a great way to add protein to your kids day and is an easy breakfast.

This cottage cheese egg bake uses a secret ingredient of cottage cheese that adds protein and helps create a moist, delicious casserole. It really is a great ingredients to add to casseroles like this!

Recipe Ingredients You’ll Need

  • Eggs: This casserole uses 12 large eggs. You can easily halve the recipe and make it using 6 eggs.
  • Spices: The spice mixture in this casserole is Italian seasoning and garlic powder. It is a simple mix of flavors but works well.
  • Cheese: The cheese is a mixture of sharp cheddar cheese and mozzarella cheese. I like to use these two but you can just use one or the other if you want.
  • Cottage Cheese: The cottage cheese helps add protein and makes a creamy, delicious egg casserole. Try to use full-fat cottage cheese if you can.
  • Sausage: This egg casserole uses turkey sausage. You also can skip the sausage or use regular sausage.
  • Chives: Fresh chives adds a fresh flavor to this casserole. You also could add fresh parsley, fresh dill or fresh basil.

How do you Make Cottage Cheese Eggs

Step 1: Whisk Eggs: Preheat the oven to 350 degrees F. In a large bowl crack the eggs and whisk until combined.

Step 2: Add Remaining Ingredients & Mix: Add the Italian seasoning, garlic powder, cheddar cheese, mozzarella cheese, cottage cheese, turkey sausage, chives, salt and pepper to the large mixing bowl.

Step 3: Mix: Stir the ingredients together.

Step 4: Add to Casserole Dish: Spray cooking spray in a 9 by 13 sized baking dish or casserole dish. Pour the egg mixture into the casserole dish.

Step 5: Bake: Bake in the oven for 50 minutes or until the eggs are set. I start checking the eggs to see if they are set around the 45 minute mark but cooking time may vary depending on your oven.

Remove from the oven and let sit for 5 minutes. Cut the cheesy eggs into squares. Garnish with your favorite toppings like fresh chives, parsley and cherry tomatoes.

Store the leftovers in an airtight container for up to 5 days in the fridge  or 3 months in the freezer.

Ways to Modify these Cottage Cheese Baked Eggs

  • Cheese: Other cheese options add additional flavor like pepper jack, monterey jack, Parmesan cheese, crumbled feta cheese, or goat cheese.
  • Spices: A variety of spices can be added like thyme, paprika, cayenne pepper, chili poweder, cumin, Greek seasoning or smoked paprika. 
  • Fresh Herbs: Adding fresh herbs to this recipe is a great way to add flavor. I love chives but also enjoy parsley, oregano, thyme and dill. 
  • Protein: You can incorporate other proteins like crispy bacon or chopped ham or even leftover roasted chicken to add a protein boost and savory flavor.
  • Vegetables: Chop and sauté some fresh veggies like bell peppers, jalapeños, green onions, spinach, mushrooms, tomatoes, or zucchini before adding them to the eggs. This will add extra flavor and nutrients.
  • Avocado: Sliced avocado can be added as a topping after baking for a creamy and nutritious addition.
  • Beans: Adding beans like black beans and white beans can give your dish a heartier texture and provide additional protein and fiber.
  • Other Ways to Bake these Eggs: I love an egg muffin and today’s recipe can be made in a muffin pan. I used a casserole dish but you can easily pour the egg mixture into muffin tins! Another great option is to pour the egg mixture onto a sheet pan and bake it that way. 
  • Crusty Bread: Another fun idea is to add croutons or crusty bread to the egg mixture before baking to make it an even heartier casserole.

Can I use any type of sausage?

Yes you can! Some great option are to use breakfast sausage, Italian sausage (sweet or spicy), chicken sausage, or even turkey sausage. Just make sure it’s cooked before adding to the egg mixture

Ingredients 

  • 12 eggs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 8 ounces sharp cheddar cheese
  • 8 ounces mozzarella cheese
  • 1 – 16 ounce container of cottage cheese
  • 12 pre-cooked turkey sausage links, chopped
  • 2 teaspoon chives, chopped
  • 2 green onions, green and white parts chopped
  • 1/2 teaspoon salt
  • 1/8 tsp.. black pepper
  • Chives for garnish
  • Fresh parsley for garnish
  • Cherry tomatoes, chopped for garnish

Instructions

  • Feel free to change up the spices- try paprika, chili poweder, oregano, cumin, Greek seasoning or smoked paprika.
  • You can add vegetables like onions, bell peppers, poblanos, tomatoes or broccoli to the egg mixture. You can saute the veggies before adding to the eggs to help them soften.
