Peanut Butter No Bake Cookies are a healthier version of your favorite no bake cookie. Coconut oil, honey, cacao powder, peanut butter, instant oats and shredded coconut come together to create a sweet treat that will cure your sweet tooth.
PEANUT BUTTER NO BAKE COOKIES
I grew up in Kalamazoo, Michigan and have a special place in my heart for the state of Michigan.
To this day we take at least a couple of trips back to my old stomping ground along with a summer vacation to Traverse City.
I love visiting Kalamazoo because it brings back so many good childhood memories going to school, playing sports and hanging out with my friends.
I recently posted a picture of these Peanut Butter No Bake Cookies on Instagram and had a high school friend mention that she had recently been dreaming of them and she remembered eating them in Michigan.
HOW LONG DOES IT TAKE NO BAKE COOKIES TO SET?
You will want your no bake cookies to set for at least 30 minutes or until they are hard. You can also put them in the fridge to help them set.
HOW DO I STORE NO OATMEAL BAKE COOKIES?
No bake cookies can be stored in an airtight container at room temperature or in the fridge for up to three week or you can freeze them in an air tight container.
A lot of the inspiration for my recipes comes from places I have traveled to, memories from childhood and family recipes. Recently I was craving no bake oatmeal cookies and knew I had to recreate them with a slightly healthier twist using the most “real” ingredients that I could.
These no bake cookies use eight ingredients and nothing needs to be baked, making them easy!
HOW TO MAKE NO BAKE COOKIES?
- Start by boiling the coconut oil, honey and cocoa powder for 2 minutes.
- From there you will mix it in with he peanut butter, instant oats, shredded coconut, chia seeds and vanilla.
- Line two baking sheets with parchment paper and drop teaspoons of the cookie mixture onto the cookie sheets.
- Cool the cookies on the counter until they are hard. If you want you can also refrigerate the cookies after they are cooled down.
- Store in an airtight container on the counter or in the refrigerator.
When it comes to cookies it doesn’t get much easier than that and these are a nice treat or snack in the afternoon.
Wait…there is oats in this recipe you say? So we can eat these for breakfast? 😉 Ok…maybe that is taking it a bit far, but I do love these cookies enough that I would debate one for breakfast
In my house we follow the 80/20 rule and I do not deprive my kids of treats.
We don’t eat them everyday but I will incorporate them into our daily eating from time to time. Cookies, like these Chocolate Peanut Butter Coconut No Bake Cookies, would be something I would make and have on hand when we want a treat.
I love that I know exactly what is going in the cookie and they are getting a few healthy foods, like oats, chia seeds, peanut butter and coconut oil in their little bodies.
If you are going to eat a treat you might as well make it worth it both with taste and with the ingredients you are putting in them.

Chocolate Peanut Butter Coconut No Bake Cookies
Chocolate Peanut Butter Coconut No Bake Cookies are a healthier version of your favorite no bake cookie. Coconut oil, honey, cacao powder, peanut butter, instant oats and shredded coconut come together to create a sweet treat that will cure your sweet tooth.
Ingredients
- 1/2 cup coconut oil
- 1/2 cup honey
- 1/4 cup raw cacao powder
- 1 cup creamy all- natural peanut butter {or nut butter of your choice}
- 2 cups instant oats
- 3/4 cup shredded coconut, unsweetened
- 1 Tablespoon chia seeds {optional}
- 1 teaspoon vanilla extract
Instructions
- In a medium pot bring the coconut oil, honey and cocoa powder to a boil over medium-high heat stirring frequently. Boil for 2 minutes and remove from heat.
- Stir in the peanut butter, rolled oats, shredded coconut, chia seeds and vanilla and stir until the peanut butter is melted and the mixture become smooth.
- Line two baking sheets with parchment paper and drop teaspoons of the cookie mixture onto the cookie sheets.
- Cool the cookies on the counter until they are hard. If you want you can also refrigerate the cookies after they are cooled down.
- Store in an airtight container on the counter or in the refrigerator.
Notes
Serving sizes is one cookie.
If you have a peanut allergy try sun butter instead of the peanut butter.
