COCONUT CRANBERRY ALMOND COOKIES

I hope your Thanksgiving was filled with delicious food and time spent with those you love. We were in Tennessee visiting my parents for the week and had a wonderful time. It was the first time traveling as a family of five with a 2 month old so that was an adjustment, but we survived. These Coconut Cranberry Almond Cookies actually came in handy on our 7 hour drive. My kids love them!

We enjoyed a delicious, traditional meal on Thanksgiving including turkey, cranberries, mashed potatoes, sweet potatoes, rolls, a chickpea salad and of course lots of desserts.  These Coconut Cranberry Almond Cookies were the perfect road snack but also made a nice treat after the big meal.

These cookies are just the right amount of sweet.  Sometimes after a heavy meal the last thing I want is a rich, overly sweet dessert.  These are also gluten and dairy free which makes them a perfect holiday cookie for those in your life that might have an allergic to wheat or dairy. Instead of using traditional flour these Coconut Cranberry Almond Cookies use Bob’s Red Mill Almond Flour along with Bob’s Red Mill dried cranberries, silvered almonds and hemp seeds.

If you aren’t familiar with Bob’s Red Mill you have to check them out! They offer so many great products from flours, to grains, to dried fruits, to baking mixes.  Their products are especially great for people with specific dietary restrictions.

Ingredients

  • 2 cups Bob’s Red Mill Almond Flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 3 Tablespoons coconut oil, melted
  • 1/4 cup + 2 Tablespoons honey
  • 1/3 cup Bob’s Red Mill Silvered Almonds
  • 1/4 cup Bob’s Red Mill Hemp Seeds
  • 1/3 cup Bob’s Red Mill Dried Cranberries

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl whisk together the almond flour, baking soda and salt. Set aside.
  3. In a medium mixing bowl stir together the vanilla extract, coconut oil and honey until combined. Pour the honey mixture into the almond flour mixture and stir until just combined. Add the silvered almonds, hemp seeds and dried cranberries and mix together.
  4. Spray a baking sheet with non-stick spray and drop spoonful or use a cookie dough scoop of the cookie dough onto the baking sheet. Bake for 10 minutes, or until the cookies are just golden.
  5. Remove and let sit for 10 minutes. Remove from the baking sheet onto a wire rack and let cool completely.
  6. Store in the fridge in an airtight container.

Notes

If you notice that the cookies seem dry and like the dough isn’t sticking together, use additional honey.

Julia, these look great! I'd make them for myself as well, but especially for my friends who are both dairy- and gluten-free. What a lovely combination of flavors and textures.
