Chicken Piccata is a quick and easy meal that tastes like you are dining in a restaurant. Tender, thin chicken breasts are browned and served in a mouth-watering lemon, butter sauce with capers and topped with fresh parsley.

CHICKEN PICCATA

I have been wanting to share a Chicken Piccata recipe with you guys for a while now. A few of my friends keep talking about how much they love it and reminded me that I do too. There is something so delicious about the lemon butter sauce in this easy Chicken Piccata recipe. That paired with the slightly salty capers and the freshly chopped parsley are a match made in heaven. I seriously slurped up every last bit of that sauce.

And my kids went crazy for it!! I put this Chicken Piccata over angel hair pasta and they couldn’t get enough of it. You can put it over any pasta you like or even rice or quinoa. It’s an easy meal to put together, which is always a plus in my book.

HOW TO MAKE THIS CHICKEN PICCATTA PASTA?

When you are making this recipe you will want to use two large chicken breasts and butterfly them and cut them in half.

The chicken breasts that I used were extra large so I used a mallet to pound them down a bit. Once you do that you will dredge them in flour and then cook them in butter and olive oil. This helps get them browned and a bit crisp.

From there you are cooking the chicken and then making the quick and easy sauce at the end. This recipe took me a total of about 30 minutes and it is worth every second of your time!

For a meal this delicious that isn’t bad! When I make this recipe I feel like I am eating in a fancy restaurant. It is that good! This dish would pair perfectly with some crusty bread to soak up all that lemon infused sauce. It also would be great with a Simple Massaged Kale Salad and these Garlic Parmesan Green Beans.

Chicken Piccata

Ingredients 

  • 2 boneless skinless chicken breasts, butterflied and then cut in half {if they are thick pound them thin}
  • Salt and black pepper
  • 1/3 cup all-purpose flour
  • 1 teaspoon oregano
  • 5 Tablespoons butter, unsalted
  • 6 Tablespoons olive oil
  • 2 garlic , minced
  • 1/3 cup lemon juice, fresh squeezed
  • 1/2 cup chicken stock
  • 1/3 cup capers, brined
  • 1/3 cup parsley, freshly chopped
  • Angel hair pasta , {or pasta of your choice}
  • Parmesan Cheese

Instructions 

  • Cut each chicken breast in half. If they are thick after cutting in half use a mallet to pound them down thinner. Season each side of the chicken with a sprinkle of salt and pepper.
  • In a shallow bowl mix together the oregano and flour. Dredge each chicken in the flour and shake off the excess flour.
  • In a large skillet over medium high heat, melt the 2 tablespoons of butter with 3 tablespoons olive oil.
  • When butter has melted and starts to sizzle add 2 pieces of the chicken and cook for 4 minutes on one side. Flip the chicken and cook on the other side for 4 minutes. Remove the chicken and set aside on a plate.
  • In the same skillet heat 2 more Tablespoons butter and 3 Tablespoons olive oil. When the butter is melted add the remaining two pieces of chicken and cook on one side for 4 minutes, then flip and cook another 4 minutes. Remove the chicken and set aside with the other chicken.
  • In the same skillet add the garlic, the lemon juice, chicken stock and capers. Bring the mixture to a boil, stirring and scraping up the bits from cooking the chicken. Add all of the chicken to the pan and bring to a simmer for 5-6 minutes, or until the chicken is cooked through.
  • Remove the chicken and add to the a large serving dish. Using the sauce in the pan add 1 Tablespoon butter and whisk until the butter melts. Add the parsley and stir. Pour the sauce over the chicken and enjoy.
