FALAFEL SLIDERS WITH TAHINI SLAW
You might see a theme here at A Cedar Spoon so far in January.
A few days ago I shared a recipe for a Mediterranean Hummus Bowl and today I am sharing another plant-based Mediterranean recipes for Falafel Sliders with Tahini Slaw in partnership with Heinen’s.
Whether you make a homemade falafel or find a pre-made mix that you can bake at home, these sliders are so easy to make.
You also can use the falafel and the toppings to create a pita pocket with the falafel.
Whether you are using falafel in a sandwich, on a salad like this Easy Fall Salad or on top of hummus it is a healthy food to incorporate into your weekly meals.
This is so easy to put together and makes a nice lunch or dinner that will keep you feeling satisfied and full.
I created a quick tahini slaw for the sliders but you can also use this Healthy Coleslaw in its place.
I love rotating these sliders with other vegetarian meals like this Moroccan Carrot Red Lentil Soup, Mediterranean Bean Salad and this Lebanese Lentil Soup.

HOW DO YOU MAKE FALAFEL SLIDERS?
MAKE THE FALAFEL: Start by either using a pre-made mix to create your falafel and bake it or you can use this recipe for homemade falafel.
MIX TOGETHER THE TAHINI SLAW: To create the tahini dressing whisk together the tahini, lemon juice, garlic, water, salt and pepper in a small bowl.
In a large mixing bowl mix together the cabbage with the tahini dressing.
ASSEMBLE THE SLIDERS OR PITA POCKETS: Lay out your slider buns or pita pockets to assemble your sandwiches.
Spread a thin layer of hummus on the bottom of the bun or in the pita pocket. Next layer the tomato, greens and the tahini slaw.
Once the falafel is done baking let it cool and add it on top of the slaw. Add the top or the bun or close the pita pocket and enjoy!
WAYS TO MODIFY THESE FALAFEL SLIDERS
DIP: There are a lot of spread or dip options when it comes to making these sliders.
I love adding my own homemade hummus like this Easy Lebanese Hummus, Lemon Hummus or Roasted Red Pepper Hummus. You can also buy a store-bought hummus. I love the Heinen’s Roasted Red Pepper or the Garlic Hummus.
If hummus isn’t your thing try this Baba Ghanoush, Lemon Spinach Artichoke Dip or this White Bean Artichoke Dip.
VEGETABLES: The sky is the limit when you add vegetables to a slider or pita. I like to add roasted red peppers, artichokes, thinly sliced bell peppers or radishes.
OLIVES: I like to add olives to these sliders. One suggestion is to chop the olives up small and create an olive “salsa”. This makes it easier for the olives to stay on the slider.
GREENS: Greens are often something I add to sliders or pitas. I love adding romaine, spinach, arugula, microgreens or sprouts.
CHEESE: When making this recipe I add feta cheese but you could swap for goat cheese. I have also added shredded mozzarella if that is all I have.

Ingredients
- 6 falafel {Fedora Food Famous Falafel Dough pre-made mix is a great shortcut}

- 6 sliced tomatoes
- 1/4 cup Heinen's Original hummus
- 1/2 cup red cabbage, shredded
- 1/2 cup tahini
- 2 Tablespoons water
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/2 cup fresh greens {I like a mixed greens blend}
- Fresh parsley for garnish
Instructions
- If you are using the pre-made falafel dough scoop the desired amount and form into the size and shape you like. I like to stick to around 2 inches.
- Preheat the oven to 350 degrees F. Cover your baking sheet with aluminum foil and spray with a non-stick spray.
- Form the patties into the desired size and shape you like {I like to stick to around 2 inches}.
- Place on the baking sheet.
- Bake in the oven for 30 minutes, flipping half way through.
- Next mix the tahini sauce, water, lemon juice, garlic and salt in a medium mixing bowl.
- Add the cabbage to the tahini sauce and mix well. Set aside.
- While the falafel bakes lay out your buns or pita pockets. Start by spreading a thin layer of hummus on the bun.
- Next place a sliced tomato, greens and then the tahini slaw.
- Once the falafel is done baking remove and let cool.
- When cool add the falafel on top of the slaw and top with a bun.
- If you have extra tahini sauce you can drizzle that over the falafel sliders before putting the top bun on.
