I have a love for potatoes. Whether it is these Gouda Smashed Potatoes, Loaded Smashed Potatoes, Spicy Lebanese Potatoes, Lemon Cilantro Potatoes or this unique Cauliflower Pepper Potato Salad I make potatoes often.
I love mixing it up and trying new recipes.

I love that I can make these without using the oven or heating up the house.
They make a great side dish or even a main at lunch or dinner.
I like to put broccoli and cheese in these twice baked potatoes but of course you can use whatever you like- from bacon, to chives to adding a drizzle of hot sauce.
You can even add other ingredients like bacon, sausage, other vegetables or other types of cheese.
These are a great meal-prep idea to have in the fridge and then reheat when ready to eat them.

Recipe Ingredients
- Potatoes: I use russet potatoes or a baking potato in this recipe. I find that they cook the best and also get a nice, crispy skin in the air fryer.
- Cheese: When it comes to cheese you can really choose whatever you want. I went with simple cheddar cheese but I think pepper jack or even gouda could be great.
- Broccoli: I like to add broccoli to this recipe to get my veggies in. You can use fresh or frozen broccoli- either works fine!
- Butter: The butter helps flavor the potatoes and moisten them. I suggest using it when making this recipe!
- Sour Cream: The sour cream is an optional garnish for these potatoes. You can also do chives, parsley, green onions or even some hot sauce.

How Do You Make Twice Baked Potatoes in the Air Fryer?
1. Prepare Potatoes: Scrub the potatoes clean thoroughly. Preheat the air fryer to 400°F, if your model requires preheating. Pierce the potatoes all over with a fork, just to vent the potato skin to release any steam.

2. Air Fry: Place the potatoes in the air fryer, not touching, and air fry for 20 minutes, turn them over and air fry an additional 20 minutes, until crispy on the outside and soft on the inside.
Take them out of the air fryer onto a plate and let cool until they won’t burn your hands.
3. Cut in Half & Scoop out Inner Potato: Cut them down the middle lengthwise and using a spoon, scoop out most of the potato, leaving about a ¼th inch border of potato on the skin. Place the cooked potato into a medium-sized bowl.
4. Mash Potato with Other Ingredients: Mash the potato with the back of a fork or potato masher and add 1 cup of the cheddar, the broccoli, butter, sour cream, salt, and pepper. Mix until everything is fully combined.

5. Stuff Potatoes: Place this back into the potato skins, making sure they are evenly stuffed. Top each potato with the remaining cheese and place them back into the air fryer, not touching. You may have to do this in two batches.

6. Air Fry: Air fry at 400°F for 5 more minutes or until the cheese is melted on top and the filling is warmed through. Serve with more sour cream if desired.

How Do You Make Twice Baked Potatoes in the Oven:
If you don’t have an air fryer, you can also make this recipe in the oven.
Everything is the same except instead of place the potato into the air fryer, you will bake them in a preheated 400°F, placing them directly on the rack.
They will bake for 45-60 minutes. To check if they are done, you can pierce them with a butter knife or fork and if they are easily pierced with no resistance they are done.
Cut and stuff them the same way and place them on a baking sheet. Place the potatoes back into the oven for 5-10 minutes until the cheese melted and they are warmed through.

Tips for Making Air Fryer Potatoes
- Not only can you make your twice baked potatoes in the air fryer but you can also reheat twice baked potatoes in an air fryer. Preheat your air fryer and then you can put your potatoes in the air fryer for 5-10 minutes at 360ºF.
- You can also freeze these twice baked potatoes. Wrap the stuffed potatoes in plastic wrap and then place them in a ziplock bag. When you want to use them thaw them overnight in the refrigerator before air frying or baking.
- Some of you might have frozen twice baked potatoes in the freezer. You can easily cook these in the air fryer. If you are wondering how long to cook frozen twice baked potatoes in the air fryer I suggest about 25 to 27 minutes at about 320 degrees F. You can add another 5 to 10 minutes if they don’t seem to be heated through.
- Use can use frozen broccoli florets or fresh broccoli for this recipe.
- While any potato will work I think Russet or a baking potatoes work best in this recipe.
- I like the potatoes to be fluffy and one really easy way to do this is using a mixer to whip them.
