Do you guys have any fun plans this weekend?

We are making our first trip to Michigan of the summer and can’t wait to spend some time enjoying Lake Michigan. 

My friend’s Mom lives near a beach in St. Joseph, MI that is really perfect. 

The sunsets are out of this world if you ever get a chance to swing by there.  Plus I get to see my best friends from high school- you can’t beat that!

I love that we are now in the heat of the summer.

  This week in Chicago we had a few 90 degree days and I am not going to complain! We are starting to spend our weekends at the pool and our nights grilling out in the backyard sipping on refreshing drinks like this Lemon Lime Vodka Cooler.

Mike is a lucky guy and gets every other Friday as a “summer Friday.”  I love having him home for three day weekends. 

We try to designate those Fridays as a family fun day. 

This past summer Friday we went to the beach which was just what the doctor ordered. 

We are lucky in Chicago to have Lake Michigan at our fingertips and some really beautiful beaches to spend time on. 

After our day at the beach we returned home and sipped this Lemon Lime Vodka Cooler.  Cheers to the summer!

Lemon Lime Spritzer

A light, refreshing and fizzy cocktail that is perfect for those hot summer days. If you love the flavors of lemon and lime combined then this is the drink for you.

Ingredients

• 2 slices of lime
• 1 slice of lemon
• 1 sprig mint
• 1 shot of vodka
• Crushed ice
• Limonata Sanpellegrino (to fill the remainder of the glass)

Instructions

1. In a tall 10oz glass put 2 slices of lime, 1 slice of lemon and the mint and muddle.
2. Add the vodka, crushed ice and Limonata Sanpellegrino to fill. Stir.
3. Garnish with fresh mint and a lemon or lime.
