Somehow Thanksgiving crept up on me this year. The other day I realized it is only a few weeks away and I had a moment of panic.

I had to remind myself that with a little menu planning we can all feel prepared for the big gathering. So far I have this Herb Butter Roasted Turkey on the menu. 

If I know one thing about Thanksgiving it is the fact that appetizers are important. They are not only appreciated by your guests but also by the cooks.

As you put together your menu this year these Mediterranean Antipasto Skewers are always a colorful, satisfying addition to your spread along with these Smoked Salmon Cucumber Appetizer Bites and this White Bean Artichoke Dip

I like having these out before the meal for my guests to snack on. The nice thing about skewers is that you can customize them to your guests’ preferences.

Today’s Mediterranean Antipasto Skewers uses some of your favorite Mediterranean inspired ingredients: olives, artichokes, fresh basil, roasted red peppers, fresh mozzarella balls, tomatoes, pepperoncinis and Kretschmar Off-The-Bone Turkey.

When making these skewers you need to think about how many guests you will be having.

I figure each guest will eat between one and two skewers.

If I am having 15 people over for the holidays I will usually make 30 skewers.

Today’s recipe will guide you to make 10 skewers, so if you need more skewers feel free to double or triple the recipe. 

Mediterranean Antipasto Skewers Two Skewers

Another thing that is nice about these Mediterranean Antipasto Skewers is that they are customizable.

You can add additional ingredients or change ingredients depending on what is in the pantry.

Sometimes I like to add Kalamata olives and I buy a big chunk of feta cheese in place of mozzarella.

Another thing I like to add to my skewers is other vegetables like sliced cucumber or bell pepper chunks.

The sky is the limit with these skewers, so get creative! 

When I end up having leftover ingredients I will set out a big cutting board filled with the extra ingredients.

I especially like to leave some of those ingredients separate for guests that might be allergic to certain foods.

Mediterranean Antipasto Skewers Above

HOW CAN I CUSTOMIZE THESE GREEK ANTIPASTO SKEWERS?

  • Try kalamata olives in place of green olives.

  • Add feta cheese chunks instead of the fresh mozzarella cheese. 

  • Use a drizzle of balsamic glaze on each skewer to add even more flavor. 

  • Mix in additional fresh vegetables like cucumbers or bell peppers. 

  • Look for grilled artichokes and fire roasted red peppers in the stores. I like the flavor that those two ingredients add to the skewers.

Mediterranean Antipasto Skewers

Mediterranean Antipasto Skewers are always a crowd pleaser at a party. They are colorful and offer your guests a wide variety of flavors and textures from the turkey to the olives to the fresh mozzarella balls. These are sure to brighten up any holiday spread!

Ingredients

  • 1 pound of Kretschmar Off-The-Bone Turkey Breast, cut and rolled for each skewer
  • 16 ounces pepperoncinis, whole
  • 12 ounces artichoke hearts, cut in half
  • 16 ounces roasted red peppers, cut into chunks
  • 20 cherry tomatoes
  • 20 olives, pitted {whatever color you would like}
  • 8 ounces, fresh mozzarella balls
  • 1 cup fresh basil, torn into smaller pieces
  • Fresh parsley

Instructions

  1. Lay out 10 skewers on a large cutting board. Start with the first skewer and alternate the ingredients starting with a cherry tomato, followed by the mozzarella cheese, basil, an olive, the turkey, a pepperoncini, roasted red pepper, artichoke and finish the skewer with the same ingredients until you have a tomato on each side.
  2. Garnish with fresh parsley and serve or keep in the refrigerator.

Notes

Feel free to use whatever pattern you would like for creating the skewers. I do like to start and end with the cherry tomatoes because I think they hold everything together nicely. I also like to try and alternate colors throughout the skewer.

I love white wines with this, like pinot grigio or savignon blanc but you also could do a light red wine. If you like a sweeter wine try reisling with it. Enjoy!
