This sweet and savory flatbread is the perfect appetizer or addition to a summer meal. You can make this in the air fryer or oven and have it on the table in under 20 minutes!

No matter the season, everyone loves a good pizza, and a favorite of my own during the summer months is my Goat Cheese Apricot Pizza.
That’s the great thing about this Apricot Goat Cheese Flatbread, it makes the very best of fresh seasonal produce that has reached its peak ripeness in July – fresh apricots.
July is the kickoff to our stone fruit season, so I am always looking for new ways to create simple and delicious recipes that make the very best of these ripe fruits.
Stone fruits, like apricots, peaches and nectarines, are so much more than simple snacking fruits. For this sweet and savory flatbread pizza, I have used fresh apricots, as well as apricot jam and pair it with creamy goat cheese.
My Goat Cheese Apricot Naan Bread Pizza, is easy as you simply top a ready baked naan bread – no need to spend extra time making pizza dough.
Hot pizza on the table in just 20 minutes, only 10 minutes to prepare and a further 10 minutes to cook. Minimal cooking so you can get outdoors and enjoy the sunshine.
Other flatbread recipes I enjoy are this Warm Brie Cranberry Naan, Chicken Feta Cheddar Pita Pizza and Warm Pear Brie Arugula Naan.
Ingredients You’ll Need
Here’s an overview of the simple ingredients we’re using. Jump to the recipe card below for exact ingredient amounts and printable instructions.
- Bread: I have used 2 naan breads to make my easy pizza base. However, you can use any variety of flatbread or pita, use what you have to hand.
- Fruit: I use both apricot jam and fresh apricots to top the pizza. Other stone fruits like peaches or nectarines would work here too.
- Cheese: I like to use Heinen’s goat cheese which has great flavor and texture.
- Nuts: a 1/4 cup of sliced almonds adds great crunch to the pizza top.
- Honey: you can add a drizzle of honey to the pizza topping before going into the oven to bake and again just before serving. Both steps are entirely optional and you can leave the honey off if you prefer.
- Garnish: I like to garnish the pizza with some mild green onions and some optional micro-greens.
How to Make an Apricot Pizza
Step 1: Layer Pizza: Start by preheating the oven to 350°F (180°C). Then lay the two naan breads out on a baking sheet. Spread the apricot jam evenly between the two flatbreads. Sprinkle over the goat cheese, adding the sliced almonds and sliced apricots. You can add a light drizzle of honey over each flatbread, but this step is entirely optional.
Step 2: Bake Pizza: Next place the baking sheet into the hot oven and bake the pizza for 10-15 minutes or until the naan is starting to get crispy and the goat cheese is just melting.
Step 3: Serve: Once baked and golden-brown remove the pizzas from the oven, and garnish with green onion and micro-greens.
You can drizzle over a little more honey if you like. Cut up the pizza and serve warm.
How to Make this in the Air Fryer
I have made this easy goat cheese pizza in the air fryer too. It works out really well and the results are great.
There are just 3 simple steps you need to take if cooking in the air fryer:
- Start by preheating the air fryer to 400°F (200°C) for 5 minutes.
- Then turn the air fryer to 350°F (180°C) and place the pizzas in the basket.
- Cook for about 5 minutes or until the bread is just crispy.
Recipe Modifications
- Fruit – swap the apricot preserves and fresh fruits for other stone fruits like nectarines or peaches. Or try other varieties of jam fruits like fig or strawberry.
- Cheese – the goat cheese can be swapped for feta cheese, parmesan cheese or a ball of fresh mozzarella cheese.
- Nuts – other nuts like pine nuts, pecans or walnuts would work too.
- Herbs – add some fresh herbs to the pizza, like sage, parsley or basil.
- Meat – a slice or two of prosciutto would work on this pizza too.
- Other Ingredients – You can drizzle balsamic vinegar on the pizza for a savory option. I also like to add pesto, fresh herbs like fresh thyme, shallots or basil leaves.
Storage Tips
Store this in an airtight container for up to 3 days. If you want to reheat it I suggest slowly in the oven or in the air fryer.
