Mediterranean Baked Pork Tenderloin is tender, juicy and full of flavors from the Mediterranean. Pork tenderloin is rubbed with a warm Mediterranean spice mixture and baked to perfection. This is an easy weeknight meal the whole family will love!

You guys are in for a treat today! If you are a fan of pork, this Mediterranean Baked Pork Tenderloin is a recipe you are going to want to try. If you haven’t baked a pork tenderloin you need to give it a try. It is one of the easiest ways to cook pork in my opinion, is a lean cut of meat and a great source of protein. You can pair it with a variety of sauces like bbq sauce or eat it as is.
It creates a tender, juicy piece of pork that is full of the warm, rich spices of the Mediterranean. I hear time and time again that people think their pork needs to be a white/gray color and that is how they know it is ready to be eaten.
I am partnering with the Ohio Pork Council to share with you that this is not true and creates a dry piece of meat. Pork needs to be cooked until about 145 degrees.
You want to see a slight blush of pink which lets you know the meat isn’t overcooked. Depending on the size of your meat and the temperature you are cooking at this shouldn’t take you too long.
For today’s recipe I found a two pack of pork tenderloin {about 2 pounds} and it took me around 30 minutes at 375 degrees F.

Recipe Ingredients for Pork Tenderloin
- Pork: This recipe uses 2 small pork tenderloins or 1 large pork tenderloins. Make sure to trip the silver skin from the pork.
- Spice Rub: The spice rub mixture adds so much flavor to the pork. This spice rub mix uses coriander, cumin, cinnamon, allspice, cloves, oregano and cayenne red pepper.
- Garlic: The garlic helps add flavor to the Mediterranean pork tenderloin. You can sub in garlic powder and just add that to the spice rub if you want to skip the fresh garlic.

Ways to Modify
- Lemon: You can add lemon juice or lemon zest to add some citrusy zest to the pork. It also helps tenderize the pork and create juicy pork tenderloin.
- Feta Cheese: Adding feta cheese to the pork is a nice option.
- Vinegar: Balsamic vinegar, red wine vinegar or white wine vinegar is another nice option if you want to marinade the pork along with the spices.
- Spices: Some other spices that would work nicely in the spice rub include paprika, thyme, onion powder, chili powder or Italian seasoning.
- Herbs: Adding herbes to this pork is a great finishing touch. Try fresh parsley, oregano or thyme.
How to Make this Baked Pork Tenderloin Recipe
Preheat oven to 375 degrees F.
Step 1: Make the Spice Rub: In a small bowl combine the coriander, cumin, cinnamon, allspice, cloves, oregano and cayenne pepper and stir. Set aside.
Step 2: Trim Silver Skin: Place pork tenderloin on a large cutting board. Trim the pork tenderloin by removing any silver skin. Cut 3 slits into each pork tenderloin using a sharp knife and insert the small piece of chopped garlic into each slit, making sure to push the garlic into the slit.
Step 3: Rub Pork with Spices: Using your hands rub the Mediterranean spice mixture over each pork tenderloin on both sides. Sprinkle lightly with salt and pepper on all sides.
Step 4: Roast the Pork: Put the pork loin in a large baking dish Bake the tenderloin at 375 degrees F for 30-35 minutes, or until the meat thermometer registers an internal temperature of 145 degrees F at the thickest part of the pork using an instant-read thermometer {there should be a blush of pink in the pork and a nice crust}.
Remove from the oven and allow to rest for 2-3 minutes on a cutting board. Slice the pork tenderloin in thin cuts and serve with fresh parsley.
Store the leftovers in an airtight container for up to 3-4 days.

Ingredients
- 2 small pork tenderloins or 1 large pork tenderloin {about 2 pounds of pork tenderloin}

Notes
- There should be a blush of pink in the pork. This is a good thing and ensures that the pork is tender and juicy!
- You can also cut up pieces of bay leaves and tuck those into the pork similar to the garlic. Just cut a few slices into the pork and put the pieces of bay leaves in to the slit. You can pull them out when you are ready to eat the pork.
