Today’s Tropical Tuna Stuffed Avocado is the perfect, protein packed lunch or snack that can be made on-the-go or at your desk at work.

You can easily make the tropical salad ahead of time at home and then add the solid white albacore tuna when you are ready to eat and then stuff it into your avocado when you are ready to eat it.

Recipe Ingredients

Tropical Tuna Stuffed Avocado is the perfect, quick and healthy lunch at your desk or on-the-go. Fresh mango, cilantro, fresh vegetables and lime juice is mixed with Sold White Albacore Tuna and Greek Yogurt and then stuffed in a delicious avocado.
  • Avocado: This recipe uses an avocados. Try to pick the ones that are soft and ripe so you can easily stuff them.
  • Tuna: Try to use canned tuna in oil if you can for the extra flavor. You also can use tuna in water.
  • Yogurt: The Greek yogurt adds a creaminess to the tuna salad and a nice tangy flavor. You also can use plain yogurt.
  • Vegetables: Diced cucumber, red onion and jalapeños are added into the tuna salad for flavor. If you don’t like spice you can skip the jalapeños.

Recipe Modifications

  • Swap tuna: Use canned salmon, shredded rotisserie chicken, or chickpeas (mashed for texture).
  • Add boiled eggs: Chop and mix into the tuna for a protein boost and creamy texture.
  • More Flavor: Add chopped jalapeño, sriracha, or red pepper flakes. Stir in a little Dijon mustard, lemon zest, or capers.
  • Herbs: Fresh parsley, dill, cilantro, or chives brighten the flavor.
  • Vegetables: Add diced celery, cucumber, red onion, or bell pepper. Chopped pickles, Quick Pickled Red Onions or banana peppers for a tangy twist.

How do you Make these Tuna Stuffed Avocados

Step 1: Prepare Tuna Salad: In a medium mixing bowl combine the Greek yogurt, mango, fresh cilantro, lime juice, red onion, cucumber, red pepper, almonds and dash of salt. Mix well and put in an airtight container and refrigerate.

Step 2: Stuff Avocados: In the container with the pre-made salad add the Sold White Albacore tuna and mix well. Slice your avocado in half and remove the pit. Remove a small scoop of avocado from each side and add it to the Tropical Tuna Salad and mash the avocado into the salad and mix until everything is well combined. Scoop the Tropical Tuna Salad into evenly into each half of the avocado.

Ingredients 

  • 2 Avocados, pit removed, sliced in half
  • 1 – 5 ounces solid White Albacore in Oil or water
  • 2 tablespoons plain Greek yogurt
  • 1/2 mango, diced
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 2 tablespoons red onion, finely chopped
  • 1/4 cup cucumber, chopped
  • 1/4 cup red pepper, seeds removed, finely chopped
  • 1/4 teaspoon cayenne pepper {optional for spice}
  • Dash of salt

Instructions 

To prepare your Tropical Salad ahead of time:

  • In a medium mixing bowl combine the Greek yogurt, mango, fresh cilantro, lime juice, red onion, cucumber, red pepper, almonds and dash of salt. Mix well and put in an airtight container and refrigerate.

When ready to prepare your Tropical Tuna Stuffed Avocado:

  • In the container with the pre-made salad add the Sold White Albacore tuna and mix well. Slice your avocado in half and remove the pit. Remove a small scoop of avocado from each side and add it to the Tropical Tuna Salad and mash the avocado into the salad and mix until everything is well combined.
  • Scoop the Tropical Tuna Salad into evenly into each half of the avocado. Enjoy!

Notes

  • Feel free to modify your Tropical Tuna Salad using a variety of ingredients like pineapple, mayo instead of Greek yogurt, any color bell pepper and maybe a drizzle of hot sauce.
  • This makes the perfect on-the-go, healthy snack or lunch. You can easily pop the top of your tuna at your desk and mix it into your pre-made Tropical Salad and then add it to your sliced avocado.
