Mediterranean Hummus Toast with Za’atar is a savory, healthy want to start your day or a great afternoon pick-me-up. Hummus is spread on toast and topped with fresh tomatoes, cucumbers, herbs and feta and a sprinkling of za’atar.

As a lover of all things hummus, this Mediterranean Hummus Toast with Za’atar is one of my new favorite meals.
This savory Mediterranean Hummus Toast with Za’atar is the perfect breakfast toast to start your day. Move over avocado toast, hummus toast is moving on in this year.
It mixes creamy hummus, whole grains, fresh vegetables and herbs and creamy feta cheese. Oh, and don’t forget that sprinkling of my favorite spice, za’atar.

In the Mediterranean region their days often start with a savory breakfast. Whether it is a big spread filled with Lemon Hummus, baba ghanoush, eggs, pita, vegetables, fruit, olives and feta or a simple piece of toast spread with hummus and topped with fresh veggies and feta, they know how to do breakfast. I know you’ll love this way of eating, too. You will feel so satisfied when you leave the table.
Recipe Ingredients
Here’s an overview of the simple ingredients we’re using. Jump to the recipe card below for exact ingredient amounts and printable instructions.
- Bread: You can use your favorite bread for this toast. I do suggest using a sturdy bread so the ingredients stay on the bread. I like to use whole grain sourdough.
- Spread: Add your favorite creamy spread like whipped feta, hummus or baba ghanoush.
- Vegetables: The vegetables on this toast are chopped greens, cherry tomatoes, english cucumbers and green onions.
- Za’atar: I love adding za’atar to my toast because it is earthy and adds a nice tangy flavor.
- Cheese: Creamy feta cheese is a great addition to hummus toast. I also really like goat cheese.
Ways to Modify Hummus Toast
- Beans: You could add beans to this toast. Try adding white beans or chickpeas. I also like to add Crispy Chickpeas.
- Greens: I like to add greens to hummus toast. Some favorite are arugula or kale.
- Other Dips: Aside from hummus you could add other spreads to your toast. Try adding Whipped Feta, Baba Ghanoush or White Bean Artichoke Dip.
- Vegetables: There are a variety of vegetables that are nice on this toast. Try carrots, roasted red peppers, sun-dried tomatoes, celery, radish, pickled vegetables or pickled red onion.
- Other Ingredients: Other ingredients that I enjoy on hummus toast are olives, artichokes, banana peppers or pickles.
How to Create Hummus Toast
1. Pick Your Bread: First order of business is the bread. I like to choose a hearty whole grain option that incorporates seeds, nuts and oats. It adds texture, flavor and health benefits. Once you pick your bread you will want to toast it to your liking.
2. Pick Your Hummus: Next up is your hummus which is the first layer you will put on your toast. I love this Lemon Hummus or Roasted Red Pepper Hummus.
3. Pick Your Toppings: From here you are going to pick your fresh vegetables that you want to top it with. I like to add micro greens, chopped spinach or fresh arugula to my toast. This isn’t necessary but always a nice addition. I then create a simple Lebanese Salata style topping using fresh tomatoes, cucumber, parsley and green onion along with a drizzle of olive oil and lemon juice. Take a scoop of the salad and top your hummus toast with it.
4. Add Cheese: Next up is the feta cheese. You can easily skip this but I like the creamy, salty addition of the feta with the fresh veggies and hummus.
5. Add Spices: Lastly, give your toast a generous sprinkle of za’atar. Za’atar is a mixture of sumac, thyme, roasted sesame seeds, marjoram, oregano and sea salt. It is the perfect spices to top your Mediterranean breakfast toast.

Mediterranean Hummus Toast with Za’atar
Ingredients
- 2 pieces of whole grain toast
- 1/2 cup hummus, divided {or flavor of your choice}
- 3 tablespoons chopped greens {try micro greens, spinach or arugula}
- 1/2 cup of cherry tomatoes, diced
- 1/4 of an english cucumber, diced
- 2 tablespoons fresh parsley, chopped
- 3 green onions, green and white parts chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoons lemon juice
- 2 teaspoons za’atar
- 2 tablespoons feta cheese, crumbled
Instructions
- In a small bowl combine the diced tomato, cucumber, parsley and green onion. Stir to combine. Add the olive oil and the lemon juice and stir to combine. Set aside.
- Toast the bread in a toaster to your liking.
- Spread a layer of hummus on each of the two pieces of bread evenly.
- Top the hummus evenly with the greens.
- Add a spoonful of the tomato salad to each piece of hummus toast followed by a sprinkling of feta cheese and the za’atar. Enjoy!

- You can use whatever hummus you want for the toasts.
- Feel free to add whatever fresh chopped vegetables you like.

My husband and I totally enjoy this today for lunch. Very light and refreshing. I bought Za’atar on Amazon a few days ago just to make this as I never had it before. I do have say I made a few changes only because I live out in the country and have to use what I have on hand and I look to my early garden on what I have. Very adaptable. I added mint. Loved it.
