This Mexican Pizza is the perfect back-to-school dinner for your family that is easy to make, packed with flavor and a kid and adult favorite. Packed with protein and you can feel good putting this meal on your table!

School is back in session! Are your kids excited? I know a lot of parents that get excited to get back into the school year routine.
Will is starting Pre-K this year and taking the bus. I have to admit that it was a little bittersweet watching him board the bus for school.
They grow up so fast! He actually turns 5 years old this weekend..where does the time go?
Since we are in the busy back-to-school season I am excited to be partnering with The Ohio Beef Council to share a quick and easy dinner or lunch idea that your whole family will love. You can feel good putting this meal on the table!
What I love most about this Mexican Pizza is how customizable it is. You can use a variety of different ingredients like subbing the beef for ground turkey or adding salsa or extra veggies.
My kids love this for an easy meal during the week. We also really like this One Skillet Cheesy Hamburger Pasta, Greek Beef Pita Pizza or this Beef Shawarma.
Recipe Ingredients

See full list of ingredients below in recipe card with exact measurements.
- Beef: Ground beef is used in this Mexican pizza. Make sure to drain the beef before using it. You also can use ground turkey or ground chicken.
- Seasoning: The seasoning in the beef is taco seasoning. You use can use your favorite store-bought taco seasoning or use a Homemade Taco Seasoning Recipe.
- Beans: The base of the pizza is refried beans. I like to spread a thin layer before adding other toppings.
- Salsa: Add salsa to your pizza. You can use this Homemade Salsa or this Tomatillo Salsa Verde.
- Tortillas: I suggest use taco sized tortillas for the mexican pizza. I think they work best and are a good size for the ingredients.
- Sauce: Red enchilada sauce is also added. You can try my Homemade Enchilada Sauce.
- Cheese: Use your favorite cheese like sharp cheddar or pepper jack.

How to Make a Mexican Pizza
Step 1: Cook Beef: Preheat the oven to 350 F. In a large skillet heat the 2 teaspoons olive oil over medium high heat. Add the ground beef and cook until the beef is browned and cooked through. Add 1/4 cup water and the packet of taco seasoning or if using a homemade taco seasoning add 2-3 Tablespoons of that seasoning instead. Turn the heat to medium and simmer until the water is mostly absorbed, stirring frequently. Remove from the heat, drain the excess fat and set aside.
Step 2: Crisp Tortillas: Spray a large skillet with cooking spray and heat over medium heat. Add each tortilla to the skillet and let cook on each side for about 1 minute to help the tortillas crisp. Place half of the tortillas on a plate and the other half arrange in a single layer on a non-stick baking sheet.
Step 3: Add Ingredients to Pizza: Spread a layer of refried black beans on each tortilla on the baking sheet followed by salsa. Next sprinkle the ground beef over the refried black beans followed by a sprinkling of cheese on each. Place the other tortilla on top of the tortilla on the baking sheet. Using a spoon spread a thin layer of enchilada sauce on each Mexican pizza, followed by another sprinkling of cheese.
Step 4: Bake: Bake in the oven for 10 minutes, or until the cheese is bubbling. Garnish with freshly chopped tomatoes, green onion, cilantro and sour cream or garnishes of your choice.

Storage Tips
Store the leftover Mexican pizza in an airtight container for up to 4 days. To reheat you can heat in the air fryer or a skillet.
