One Skillet Beef Taco Pasta is a quick and easy meal mixing your favorite taco fillings with pasta. Flavorful, juicy ground beef cooks with salsa, taco seasoning, diced tomatoes and corn and then is paired with pasta to create a family favorite.

One skillet pasta meals are my favorite.

I love being able to put everything in one skillet and have a complete meal at the end.

The icing on the cake is that you only dirty one skillet. Since I am the one doing the dishes in my house this is the way I like it.

Today’s One Skillet Beef Taco Pasta takes your favorite taco fillings and mixes them with pasta and is topped with cheese and your favorite garnishes.

If you are looking for meals that make enough for leftovers this One Skillet Beef Taco Pasta should do the trip. I always have enough for another meal or for lunches during the week.

This meal is also very customizable.

Feel free to add more vegetables–bell peppers or poblanos work great.

You can also change up your salsa to do salsa verde or a black bean and corn salsa. If you want to bulk up the dish even more add a can of black beans.

When I make this my kids always ask for seconds.

I also make cornbread and these Simple Garlic Parmesan Green Beans to go with it.

One Skillet Beef Taco Pasta is a quick and easy meal mixing your favorite taco fillings with pasta. Flavorful, juicy ground beef cooks with salsa, taco seasoning, diced tomatoes and corn and then is paired with pasta to create a family favorite. 

Ingredients

  • 2 Tablespoons olive oil
  • 1/2 of a medium sweet onion, chopped
  • 2 garlic cloves, minced
  • 1 pound Certified Angus Beef ® brand
  • 2 Tablespoons taco seasoning
  • 1/2 cup your favorite salsa
  • 1 - 15 ounce can of fire roasted diced tomatoes
  • 1 - 15 ounce can of corn, drained and rinsed
  • 2 cups beef broth {or broth of your choice}
  • 8 ounces of your favorite pasta {small to medium pastas work best}
  • 1 1/2 cups sharp cheddar cheese

Garnishes:

  • Cherry tomatoes, cut in half
  • Red onion, diced
  • 2 Tablespoons olive oil
  • Fresh cilantro, chopped
  • Green onions, chopped
  • 2 Tablespoons olive oil
  • Sour cream
  • Extra cheese

Instructions

In a large skillet heat the 2 Tablespoons olive oil over medium heat. Add the onion and garlic and sauté for 2 minutes, or until the onion is soft. Add the ground beef and continue to cook, breaking up the ground beef with a large spoon, until the beef is browned. Add the taco seasoning, salsa, fire roasted tomatoes, corn, beef broth and pasta.

Bring to a boil, cover and turn heat down to low and simmer for 10 to 12 minutes. Remove the lid and add the cheese stirring to combine everything. Remove the skillet from the heat and let sit for 1 to 2 minutes or until the cheese is melted.

Serve the pasta in a bowl with your favorite garnishes. I like to add fresh tomatoes, cilantro, red onion and sour cream.

Notes

Feel free to use regular diced tomatoes instead of the fire roasted tomatoes.

When it comes to the pasta you can use whatever you want but I think the small to medium pastas work best.

I like to use sharp cheddar cheese but you can also use a mixture of your favorite--pepper jack adds a little spice.
