LEMON GARLIC BUTTER GRILLED RIBEYE 

Grilling season makes me so happy.

I especially love grilling steaks this time of year and enjoying them with a nice glass of red wine, a Lemon Arugula Salad and Mediterranean Vegetables

When I head to my local Giant Eagle I always buy Certified Angus Beef ® brand ribeye steak {also known as Delmonico steaks} for easy grilling.

I know when I buy Certified Angus Beef ® brand I am getting the highest quality beef and that it will have great flavor.

WHAT INGREDIENTS ARE IN THIS GRILLED RIBEYE RECIPE?

RIBEYE STEAKS: When I buy ribeye steaks at my grocery store they are often called Delmonico ribeye steaks.

I buy Certified Angus Beef ® brand and each cut of their beef is a taste of the heartland – perfectly marbled, incredibly juicy, amazingly tender and packed with flavor.

Only the best cuts of choice and prime make the cut, because only the best can be called the Certified Angus Beef ® brand. 

MARINADE: The marinade uses Worcestershire sauce, lemon juice, soy sauce, olive oil, Italian seasoning, garlic, salt and pepper. Honestly this is a marinade I use a lot when I make beef.

One thing to note is that because of the acidity from the lemon juice I would only marinade the beef for 2 hours or less. The acidity will break the meat down too much and ruin the texture of the beef.

LEMON GARLIC BUTTER: The lemon garlic butter is the perfect finishing touch for these grilled ribeye steaks. I love the savory, rich flavor it adds to the steak.

To create this butter let the butter come to room temperature so it is soft and then you will stir in the lemon juice, lemon zest, minced garlic and chopped parsley.

HOW DO I MAKE THIS GRILLED RIBEYE STEAK RECIPE?

  1. Pull your ribeye out of the refrigerator and set on the counter.
  2. In a medium mixing bowl combine the marinade ingredients and whisk well. Add the steaks to a large ziplock bag or container and pour the marinade over the steaks.
  3. Marinade in the fridge for two hours
  4. When you a ready to grill the steaks pull them out of the fridge and let them sit out until they come to room temperature which you can do this while you prep your lemon garlic butter. 
  5. Heat the grill to medium high heat and place the steaks on the grill. The steaks should cook until golden brown and just slightly charred, about 4 to 5 minutes.
  6. Turn the steaks over and continue to grill another 4 to to 5 minutes for medium-rare which is an internal temperature of 135 degrees F, 5 to 7 minutes for medium which is 140 degrees F or 8 to 10 minutes for medium-well which is 150 degrees F.
  7. Transfer the steaks to a cutting board or platter. Using foil loosely tent them and let rest about 5 minutes to seal the juices. Slice the ribeye or serve with a dollop of the lemon garlic butter.

WHAT IS RIBEYE STEAK?

Ribeye steaks is one of the most common cuts of steaks and also one of the best. We love them in my house!

It is from the beef rib primal cut. The common names for ribeye is Delmonico Steak and Filet of Ribeye. When you are at the store those are the names you might see.

A ribeye is boneless and a rib steak is bone-in. This steak is rich, tender, juicy and full-flavored, with generous marbling throughout. They have just the right amount of fat. The best cooking methods for ribeye is grilling and sautéing.

WHAT SHOULD I PAIR WITH MY GRILLED RIBEYE STEAK RECIPE?

POTATOES: I love pairing potatoes with my steak recipes. A few of my favorites are these Gouda Smashed Potatoes, Lemon Cilantro Roasted Potatoes or these Easy Oven Roasted Potatoes

VEGETABLES: My other favorite pairing for steak is vegetables. The more the better in our house. We especially love these Mediterranean Roasted Vegetables, Za’atar Roasted Carrots or these Grilled Vegetables Recipes

Lemon Garlic Butter Grilled Ribeye

Lemon Garlic Butter Grilled Ribeye is the perfect warm weather grilling meal. Ribeye steaks are marinaded in a flavorful but simple marinade and then grilled and topped with lemon garlic butter. Your family will love this protein packed meal! 

Ingredients

  • 4 - 10 ounce Certified Angus Beef Ribeye Steaks

FOR THE MARINADE

  • 1/2 cup extra virgin olive oil 
  • 1/4 cup of Worscestershire sauce 
  • 1 lemon, juiced 
  • Zest of 1/2 of a lemon 
  • 1/3 cup soy sauce
  • 3 garlic cloves, minced 
  • 1 teaspoon oregano 
  • 1 teaspoon kosher salt 
  • 1/4 teaspoon black pepper 

FOR THE LEMON GARLIC BUTTER

  • 1/2 cup of unsalted butter
  • 4 garlic cloves, minced 
  • 1 Tablespoons lemon juice 
  • Zest from 1 lemon 
  • 1 teaspoon fresh parsley, chopped 
  • 1 teaspoon fresh basil, chopped 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon black pepper

Instructions

    TO MAKE THE BUTTER:

    1. Combine butter, garlic, lemon juice, lemon zest, parsley, basil, salt and pepper in a mixing bowl.
    2. Transfer mixture to parchment paper and shape into a log shape.
    3. Roll in parchment to 1 to 1 1/2 inches in diameter, twisting the ends to close off the parchment log.
    4. Refrigerate until ready to use {lasta up to 1 1/2 weeks}. You can use this butter on bread too!

    TO MAKE THE MARINADE:

    1. Combine the olive oil, Worcestershire sauce, lemon juice, lemon zest, soy sauce, garlic, oregano, salt and pepper in large ziplock bag or a tuperrware container.
    2. Add the ribeye steaks to the marinade and refrigerate for up to 2 hours {do not refrigerate longer than that as the lemon juice will break the meat down too much}.

    FOR GRILLING:

    1. When you are ready to grill allow the steaks to come to room temperature before grilling.
    2. Heat the grill to medium high heat. Place the steaks on the grill and cook until golden brown and just slightly charred, about 4 to 5 minutes. Turn the steaks over and continue to grill another 4 to to 5 minutes for medium-rare which is an internal temperature of 135 degrees F, 5 to 7 minutes for medium which is 140 degrees F or 8 to 10 minutes for medium-well which is 150 degrees F.

Notes

The lemon garlic butter is great for bread as well!
