Cinco de Mayo is fast approaching! In my college days Cinco de Mayo was one of my favorite holidays. My girlfriends would all head to one of our favorite restaurants in Champaign, IL and celebrate with margaritas, chips, salsa, guacamole and a whole lot of fun girl time. No worries, things always remained very tame! ๐
While I must admit that my Cinco de Mayo’s aren’t as fun and exciting as they were in college, I still like a good margarita or two with a side of chips and guacamole! Pineapple Mango Guacamole might not be as fun as a table full of my favorite girls but it sure tastes good!
Guacamole is simple to throw together. It is a great appetizer at a party or get together with some chips or as a topping for a Mexican meal. When making guacamole and following a recipe you don’t have to be exact about the ingredients either. You can add a little of this, a little of that, and adjust it to get the perfect guacamole.
Pineapple Mango Guacamole is a sweet version of traditional guacamole—fruit salsa meets guacamole. I like my guacamole chunky so I didn’t do too much mashing but feel free to really mash it up for a creamy consistency.
Avocados are a healthy fat for the body and have a wide range of anti-inflammatory benefits, are an anti-oxidant and promote blood sugar regulation in case you needed another reason to eat Pineapple Mango Guacamole…SO this should cancel out all of the beer and chips you will consume on Cinco de Mayo. Enjoy!
