SLOW COOKER SAUSAGE KALE WHITE BEAN SOUP
I recently asked on Facebook what you guys wanted to see more of and soups came up.
I am glad because I eat a lot of soups during the winter, and honestly year round.
I love soups because they are versatile, easy to put together and you can load all kinds of good ingredients in them.
Today’s Slow Cooker Sausage Kale White Bean Soup is not only hearty and warming for winter, but it packs protein and vitamins into every bowl.
For this soup I used andouille sausage but you can use whatever your favorite is-chicken sausage, Italian sausage-or even leave it out to make this a vegetarian soup.
When I created this soup I was thinking back to this Smoked Sausage, White Bean and Spinach Pasta with Toasted Pine Nuts that I made a few years ago.
It is a favorite in my house that we make time and time again.
The flavors in that pasta dish just work beautifully together so I knew I wanted to put some of them into this soup.
I used kale instead of spinach but either work great.
I think if you want to make this even closer to the pasta dish you could add a can of diced tomatoes and zucchini {I would add the zucchini the last 15 minutes of cooking so the zucchini isn’t soggy}.
If pasta is your thing you could even add pasta to the slow cooker the last half hour of cooking-maybe try a small pasta or orzo.
I used chicken broth for this soup but you can use vegetable broth, especially if you are leaving the sausage out and going for a vegetarian version.
I like to top mine with fresh parsley and if you like cheese, freshly grated parmesan cheese would be a nice addition.
As I write this post it is February 24th and going to be 75 degrees in Cleveland.
Now that is just plain crazy and not normal so this probably wouldn’t be my first choice for a warm day.
But since I know the weather will quickly change and I am sure more snow is in our future I will have this Slow Cooker Sausage Kale White Bean Soup in my back pocket, ready to be made!

Slow Cooker Sausage Kale White Bean Soup
Ingredients
- 1 - 12oz. package of sausage {I used andouille}
- 4 garlic cloves, minced
- 1/2 sweet onion, chopped
- 2 large carrots, diced
- 2 celery stalks, diced
- 2 - 15oz. can of white beans {I used cannellini beans}
- 4 cups chicken broth {or vegetable broth}
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon basil
- 1/2 teaspoon thyme
- 3 bay leaves
- 1/2 teaspoon cayenne red pepper {optional for spice}
- 2 cups kale, roughly chopped {or green of your choice}
Garnishes:
- Fresh parsley
- Parmesan cheese
Instructions
- Cook the sausage according to the package and put in the crockpot. Add the remaining ingredients and stir. Cook on low for 4 hours or high for 2 hours. Serve warm with fresh parsley and parmesan cheese.
Notes
You can use any green you like-try spinach instead of kale.
You could use a different bean- try kidney beans or chickpeas.
You can make this vegetarian by leaving out the sausage and using vegetable broth.
You could add other vegetables, like zucchini. If you do use zucchini I would add it with 15 minutes left to cook so it doesn't get soggy.
You could add pasta to this soup which would be great. Try smaller shaped pastas like elbow or orzo.
