Apple season is here and a lot of you have been apple picking with your families. 

I know I am always looking for fun ways to use apples in baked goods. Today’s Apple Bars with Pumpkin Pie Spice Icing are a favorite in my family.

They are soft, flavorful and a great treat in the fall. If you are having a Halloween get together or pre-trick-or-treating festive make a batch of these to share with friends. 

You will especially love that creamy pumpkin pie spice icing.

It adds an extra layer of deliciousness to the top of the apple bars.

Apple Bars with Pumpkin Pie Spice Icing ingredients

For the Apple Bars:

  • Butter
  • Sugar
  • Eggs
  • Vanilla
  • Flour
  • Baking Powder and Baking Soda
  • Pumpkin Pie Spice
  • Apples

For the Icing:

  • Vanilla 
  • Butter
  • Cream cheese
  • Powdered sugar
  • Pumpkin pie spice

How do you Make these Apple Bars

Step 1: Combine Wet Ingredients: Preheat the oven to 350 degrees F. Grease a 9×13” quarter baking sheet and set aside.

Cream the butter and sugar in a large bowl of an electric stand mixer. Add water, vanilla, and eggs in one at a time, beat until combined.

Step 2: Combine Dry Ingredients: In a large bowl sift together flour, baking powder, baking soda, and pumpkin pie spice. Gently add in the dry ingredients to the wet ingredients. Stir to combine.

Fold in chopped apples.

Step 3: Add Batter to Baking Pan: Pour batter into the greased sheet pan. Bake for 20 minutes or until a toothpick inserted comes out clean. When finished baking, let cool slightly before frosting.

Step 4: Make Frosting: In a large bowl of an electric stand mixer, beat the butter and cream cheese until smooth and creamy.

Add powdered sugar, pumpkin pie spice and vanilla. Beat until creamy.

Storage Tips

You can store these apple pie bars in an airtight container for up to a week.

Ingredients 

  • 1 cup unsalted butter, softened at room temperature
  • 1 cup granulated sugar
  • 2 large eggs, beaten
  • 1 cup water
  • 1 1/2 teaspoon vanilla
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 3 granny smith apples, peeled and chopped
  • ½ cup unsalted butter

  • 2 cups powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla
