We made it to the end of the year and that is something to celebrate.
I know we all have things to be thankful for in our lives.
As we approach the holidays I am back with another cranberry recipe.
At the holidays I love to make different things with cranberries.
It seems to be all things cranberries around here. I have recently shared these Cranberry Bliss Bars and a Cranberry Wine Spritzer.
Since cranberries are one of my favorite foods it only makes sense that I share a few recipes around the holidays with you guys.
In my house we love today’s Cranberry Bread Recipe for a snack or treat around the holidays.
What I love most about this recipe is the orange flavor that is infused in the bread. It is such a nice pairing with the cranberries. If you want you can also add the cream cheese drizzle on top when you are done!
Recipe Ingredients
- Dried Cranberries: The dried cranberries are also both in the bars and in the frosting. I love the sweet flavor they add to these bars. If you like dried cranberries you also need to try these Almond Energy Bites or this Coconut Cranberry Chia Seed Granola.
- Oranges and Orange Zest: I love the orange flavor in this bread. It uses orange zest, extract and slices to create an extra citrusy flavor with the sweet cranberries. The holidays is the perfect time to make this bread because oranges are in season and taste so great!
- Cream Cheese: There is an icing on top of this bread. It isn’t necessary to add that but I really like it and think it gives some extra flavor. The icing uses cream cheese.
- Buttermilk: Buttermilk is used in this recipe. Some stores sell buttermilk otherwise you can make a homemade buttermilk from scratch.
How Do You Make Cranberry Bread:
For the bread:
Step 1: Preheat oven to 350°. Grease or spray with a non-stick spray 2- 8×4-inch loaf pans.
In a large bowl, combine the flour, brown and white sugars, baking powder, baking soda and cinnamon.
Step 2: Whisk in the eggs, buttermilk, melted butter, orange zest and orange extract just until combined. Do not overmix.
Step 3: Fold in the dried cranberries and orange segments.
Step 4: Pour into loaf pans and bake on center rack of the oven for approx. 50 min. or until a toothpick inserted into the center of the loaf comes out clean.
Step 5: Cool in pans for approx. 10-min. then remove to a wire rack to finish cooling.

Ingredients
- 2 3/4 cups all-purpose flour
- 1 cup light brown sugar, packed
- 2/3 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 2 large eggs, room temperature
- 1 cup buttermilk
- 8 Tablespoons butter, melted
- 3/4 teaspoon orange extract
- 1 1/2 Tablespoons orange zest
- 1 1/2 cups dried cranberries, chopped fine
- 1 cup orange segments, chopped
FOR THE ICING
- 4 ounces cream cheese
- 1 cup powdered sugar
- 2 Tablespoons half and half
- 1/4 teaspoon orange extract
Instructions
- FOR THE BREAD:

Grease or spray with a non-stick spray, either 2- 8×4-inch loaf pans or 1- 9×5-inch loaf pan. You may have a bit left over with the 9×5-inch. You can bake this in a mini loaf pan if you like.
In a large bowl, combine the flour, brown and white sugars, baking powder, baking soda and cinnamon.
Whisk in the eggs, buttermilk, melted butter, orange zest and orange extract just until combined. Do not overmix.- Fold in the dried cranberries and orange segments.

FOR THE ICING
Using an electric mixer, mix together the cream cheese, powdered sugar half and half and orange extract until smooth and creamy.- If too thick, add in more half and half until it is a drizzle consistency. Drizzle over top of cooled loaf using a fork or spoon.

That bowl of cranberries makes me so homesick! I don't get the same feeling from looking at a bag of frozen cranberries. :) Beautiful bread!
