Cucumber Hummus Bites make the perfect finger food and appetizer for your next party or get together. Crisp cucumbers slices are topped with roasted red pepper hummus, tomatoes, feta cheese and fresh parsley.

These Cucumber Hummus Bites take just 15 minutes to put together with crisp cucumber slices, roasted red pepper hummus, cherry tomatoes, feta, and fresh parsley. No cooking required, and they hold up well on a party platter, which makes them an easy make-ahead appetizer.
It’s always nice to set out a bowl of hummus with vegetables and pita for guests, but sometimes it’s even better to hand them something a little more put-together. These bites are simple enough that almost everyone likes them, but still feel a bit more special than a plain dip. Hummus is my go-to snack in my house, whether it’s a spread for Beef Shawarma Wraps, a Mediterranean Veggie Sandwich, or an addition to Mediterranean Chicken. - Cucumber: I suggest using a seedless cucumber like a Persian or English cucumber. These can be cut thinner and have a thinner skin.
- Hummus: You can use either a store-bought hummus or make your own. I always find homemade hummus to be the best because I can control what is in it. If you want to make your own try my Lemon Hummus, Roasted Red Pepper Hummus, Spicy Hummus or Lebanese Hummus.
- Tomatoes: I used cherry tomatoes and cut them in half. You could also use finely diced tomatoes as a topping.
- Cheese: Feta cheese is added to these cucumber bites. You also could use goat cheese if you like!
Recipe Modifications
- Vegetable Base: Swap the cucumber for endive leaves, thin radish slices, or sturdy crackers if you want a different base or need a gluten-free, low-carb option that still holds the toppings well.
- Hummus Flavor: Try Lemon Hummus, Spicy Hummus, or Roasted Pine Nut Hummus in place of roasted red pepper for a different flavor profile each time you make these.
- Add Protein: Top with a small piece of grilled chicken, a few chickpeas, or a thin slice of prosciutto to turn these from a light bite into something more filling for a lunch spread.
- Herb and Spice Swap: Swap the parsley for fresh mint or dill, or add a pinch of crushed red pepper on top for a little heat.
- Lebanese-Leaning Variation: Use my Lebanese Hummus as the base and finish each bite with a light sprinkle of za’atar or sumac instead of parsley for a more traditional Lebanese flavor profile.
- Cheese Swap: Goat cheese works well in place of feta if you want a creamier, milder finish, or leave the cheese off entirely for a dairy-free version.

How to Make these Cucumber Hummus Bites
This recipe couldn’t be easier to make!
Step 1: Slice Cucumbers: Slice the cucumber into 1/2 inch thin rounds and lay them out on serving platters.
Step 2: Add Hummus: Using a small teaspoon spoon a small amount of the roasted red pepper hummus onto each cucumber slice.
Step 3: Top with Other Ingredients: Top with the cherry tomato half, crumbled feta cheese and the freshly chopped parsley. Serve chilled or store in an airtight container before serving.
Common Mistakes to Avoid
- Not drying the cucumber slices. Skipping the pat-dry step is the number one reason these turn soggy. Take a few extra seconds with a paper towel before adding hummus.
- Slicing the cucumber too thin. Anything thinner than 1/2 inch tends to bend or snap once the toppings go on. Thicker slices hold their shape much better.
- Using a watery hummus. A thin or runny hummus won’t stay put on top of the cucumber. Stick with a thick, well-blended hummus, homemade or store-bought.
- Assembling too far ahead. These are best made no more than a few hours before serving. The longer they sit fully assembled, the more moisture the cucumber releases into the hummus.
- Leaving them out at room temperature. Keep these chilled until just before serving, especially in warm weather, both for texture and food safety with the feta and hummus on top.
Storage Tips
Store leftover cucumber hummus bites in an airtight container in the fridge for up to 2 days. They’re best enjoyed the day they’re made, since the cucumbers will soften and release more moisture the longer they sit with the hummus on top.
Recipe FAQ
A seedless cucumber like English or Persian works best. Both have thinner skin and fewer seeds, so the slices hold their shape and don’t get watery as quickly as a regular slicing cucumber.
Slice them about 1/2 inch thick. Thinner slices tend to bend or break under the toppings, while anything much thicker becomes hard to eat in one bite.
Roasted red pepper hummus is my favorite here, but any thick, store-bought or homemade hummus works. Avoid a thin or watery hummus, since it won’t hold its shape on top of the cucumber.
Pat the cucumber slices dry with a paper towel right after slicing to remove surface moisture before adding the hummus. Assemble these no more than a few hours ahead, and keep them chilled until just before serving, since the cucumbers will release more moisture the longer they sit.

- Feta: Feel free to leave the feta cheese off if you don’t like it, or swap in goat cheese.
