We love sliders in my house! My favorite thing about these Easy Buffalo Chicken Sliders is how easy they are to put together with minimal ingredients.

These are the perfect mix of tender shredded chicken, tangy buffalo sauce and melted gooey cheese, all layered and baked until the buns are golden brown.

You can use leftover shredded chicken or a rotisserie chicken to save time. I love easy shortcuts like that! I like serving these buffalo chicken sliders on game day with crisp celery sticks, carrots and a ranch dipping sauce.

  • buffalo sauce: use your favorite store-bought buffalo sauce for this recipe. You can also make your own using this recipe. You also can try to find a spicy buffalo sauce for more heat!
  • ranch dressing: ranch dressing is also used to create the buffalo sauce. You can use your favorite store-bought dressing or you can use this homemade ranch dressing recipe.
  • spices: the spices in this recipe are garlic powder and garlic salt. Both add nice flavor but you can skip them if you don’t have them on hand.
  • chicken: shredded chicken is used in these sliders. You can use leftover shredded chicken or buy a rotisserie chicken and shred that.
  • green onions: fresh chopped green onions are a nice finishing garnish to these sliders.
  • cheese: shredded Monterey jack cheese helps create a cheesy, gooey slider. I like to shred the cheese myself whenever possible. I find it most fresh and less additives.
  • slider buns: slider buns are used in this recipe. I like to use Hawaiian slider buns whenever possible.

Recipe Variations

  • cheese: swap the cheese for pepper jack, cheddar cheese blue cheese or provolone.
  • more heat: if you prefer a spicier buffalo chicken slider you can skip the ranch and just use all buffalo sauce. You also can add crushed red pepper, hot sauce or cayenne red pepper.
  • toppings: if you like a more robust chicken slider add shredded lettuce, pickled red onions, pickled vegetables, or even a simple coleslaw.
  • swap the buns: you can use other buns like pretzel buns or try a low-carb options and make these into lettuce wraps.

Step-by-Step Instructions

Step 1: Heat oven to 350 degrees. Slice the whole pack of rolls in half so you have 12 tops and 12 bottoms. Place the bottom half of the rolls in a baking dish and set aside.

Step 2: In a large mixing bowl combine the buffalo sauce, ranch dressing, and garlic powder until well combined. Add the chicken and 3 tablespoons green onions and toss to combine.

Step 3: Evenly spoon the chicken mixture over the rolls, top with the shredded cheese and place the top of the rolls on top of the cheese.

Step 4: In a small bowl combine the melted butter and garlic salt. With a spoon or pastry brush, spoon or brush the butter over the tops and sides of the rolls. Cover the baking dish with foil.

Step 5: Bake covered for 10-15 minutes then uncover and bake an additional 5-7 minutes until the cheese is melted. Remove from the oven and serve immediately. Serve with celery, carrots and a blue cheese dressing.

Make-Ahead Tip: Assemble and refrigerate up to 24 hours before baking. When you are ready to serve them, remove from the fridge and cook as noted in the directions.

Storage Tips

  • Store the leftover buffalo slider shredded chicken in an airtight container for up to 4 days. To reheat you can heat in a skillet or in the microwave.
  • You also can freeze the chicken. Make sure to cool the chicken completely. You can store in the freezer for up to 3 months. To reheat, let thaw overnight in the fridge and then heat in a skillet or microwave.

Ingredients 

  • 3/4 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 1/2 teaspoon garlic powder
  • 3 cups chicken, cooked and shredded
  • 4 tablespoons chopped green onions, divided
  • 2 cups Monterey jack cheese, shredded
  • 3 tablespoons butter, melted
  • 1 teaspoon garlic salt
  • 1 – 12 count hawaiian rolls

Instructions

Notes

  • Make sure to bake on the middle rack of the oven. If it’s too high the tops of the buns will brown before the cheese is melted. 
  • If you want this slightly milder you can use half ranch and half buffalo sauce or dip in ranch dressing. You can also buy a milk buffalo sauce.
  • This is great served with carrots and celery like buffalo wings are served with. 
  • Buffalo Chicken Sliders are best eaten right after baked. 
  • Store leftovers in an airtight container in the refrigerator for up to 2-3 days. For best reheating results, reheat at 280 in an air fryer for about 5 minutes.
