My family loves sliders.
I find them so easy to put together on busy nights, especially when you have leftover meat to use.
For today’s Roast Beef Sliders I will often buy thinly sliced roast beef from the deli or I will use leftover roast beef from this recipe here.

The salty roast beef with the creamy provolone, savory caramelized onions and sweet glaze on top of the buns makes for a great slider.
There are also a lot of ways to modify this roast beef slider recipe. Try adding roasted red pepper or pepperoncinis, banana peppers or sautéed mushrooms.

Recipe Ingredients
- Onion: I use yellow onions in this recipe. I like the flavor they add when caramelized. You could also use red onion or sweet onion.
- Oil: I use extra virgin olive oil to sauté the onions.
- Butter: along with the olive oil, I use unsalted butter to caramelize the onions, which adds great flavor. I also make a seasoned melted butter for spreading over the rolls before they are baked in the oven.
- Seasoning: I season the onions with kosher salt and black pepper.
- Rolls: I use a 12 pack of Hawaiian rolls for this recipe, but you can use any bread roll.
- Cheese: I layer slices of provolone cheese into the rolls. I like the subtle flavor of this cheese paired with roast beef. You also could use shredded provolone but I think the slices work better.
- Roast Beef: for ease I like to use slices of deli roast beef or you can use leftover roast beef.
- Maple Syrup: I sweeten the butter with a little maple syrup.
- Worcestershire Sauce: Worcestershire sauce adds great savory flavor to the butter glaze.
- Mustard: I use spicy brown mustard in the butter.
- Garlic: I use a little garlic powder to season the butter.
- Garnish: I like to sprinkle poppy seeds over the warm rolls just before serving.
How to Cook Roast Beef Sliders
1. Preheat the Oven: Preheat the oven to 350°F. Line a 9×13-inch baking sheet with parchment paper. Set aside.
2. Sauté the Onions: In a sauté pan add the onions, oil, 1 tablespoon butter, and salt and pepper. Cook for 10-12 minutes or until the onions are soft and slightly caramelized. Set aside.
3. Start Preparing the Rolls: Using a serrated knife cut the slider buns horizontally. Place the bottom of the rolls onto the baking sheet. Place 6 slices of cheese on the rolls.
4. Add Roast Beef and Onions: Top the cheese with the roast beef.
Top the roast beef with the caramelized onions.
5. Add a Layer of Cheese: Top the onions with 6 slices of cheese. Add the top of the rolls to the sliders.
6. Prepare the Butter: In a small bowl add 3 tablespoons of melted butter, maple syrup, Worcestershire sauce, mustard, and garlic powder. Mix until combined.
7. Glaze the Rolls: Use a pastry brush to brush the butter mixture on top of the buns. Sprinkle with Italian seasoning if you want or your favorite spice blend.
8. Bake the Rolls: Cover the top of the roast beef sandwiches with an aluminum foil tent. Bake for 15-20 minutes or until the sliders are heated through and the cheese has melted and the buns are just golden brown.
9. Serve: Remove from the oven and top with poppy seeds and fresh parsley on the tops of the rolls. You also could sprinkle bagel seasoning or sesame seeds over the tops of the buns.
Recipe Modifications
- Roast Beef: For ease I’ve opted for deli roast beef slices, however this is a great recipe for using up leftover roast beef. Try my Roast Beef Recipe here.
- Onions: I’ve used yellow onions, but you could also use red onion or shallots in this recipe. You also could caramelize onion for that extra delicious flavor.
- Cheese: I’ve used sliced provolone cheese, but you could also use cheddar cheese, Colby jack, pepper jack, swiss cheese or mozzarella cheese. Or try a mixture of different cheese.
- Mustard: I used spicy brown mustard in the butter glaze, but you can use any variety of mustard like honey mustard or yellow mustard or even swap for some horseradish.
- Vegetables: Add extra sautéd veggies like sliced mushroom, red bell pepper or zucchini, along with the onion.
- Chili: Add a touch of chili heat by sautéing some diced red chili along with the onion, or add a little chopped pickled jalapeño peppers along with the cheese.
- Sauce: Sauces can take these roast beef sliders to the next level. A few ideas are a horseradish sauce, yogurt based sauce like this Tahini Yogurt Sauce, salsa or pico de gallo or a creamy dill sauce.
- Other Ingredients: Try pickles, roasted red peppers, pickled red onions, pickled vegetables, or jalapeños.

Roast Beef Sliders
Ingredients
- 2 cups yellow onions, thinly sliced
- 1 tablespoon olive oil
- 4 tablespoon unsalted butter, divided
- ⅛ teaspoon coarse kosher salt
- ⅛ teaspoon black pepper
- 12 Hawaiian rolls, cut horizontally
- 12 slices provolone cheese
- 1 pound deli roast beef or leftover roast beef, thinly sliced
- 2 tablespoons maple syrup
- 3 teaspoons Worcestershire sauce
- 2 teaspoons spicy brown mustard
- ¼ teaspoon garlic powder
- 1 tablespoon fresh parsley
- 1 teaspoon poppyseeds
Instructions

- Heat a large skillet over medium heat. Add the onions, olive oil, 1 tablespoon butter, and salt and pepper to the pan and sauté for 3 minutes. Turn the heat down to medium-low and continue to cook for 10-12 minutes or until the onions are soft and slightly caramelized. Set aside.
- Cut the rolls horizontally in half. Place the bottom of the rolls onto the baking sheet.
- Place 6 slices of provolone cheese on the rolls.
- Top the cheese with the roast beef.
- Top the roast beef with the caramelized onions.
- Top the onions with 6 slices of cheese.
- Add the top of the rolls to the sliders.
