EASY MEXICAN NOODLE CASSEROLE
Does anyone else have fond memories of noodle casseroles?
I know I do. Whether my mom or grandma was creating the meal, it was always delicious and comforting.
The thought of those meals warms my heart and reminds me of all of the good times I had sitting around the table with family enjoying a home cooked meal.
Today’s Easy Mexican Noodle Casserole puts a fresh, creative spin on your favorite noodle casseroles using No Yolks Noodles , ground turkey, a rainbow of vegetables, warm spices and cheese.
This Easy Mexican Noodle Casserole comes together easily and is a family favorite. It also makes really great leftovers, which in my house is the key for busy nights and weekday lunches.
The ground turkey creates a lighter dish but feel free to use ground beef or leave the meat out all together. You can also add a variety of additional ingredients including black beans, bell peppers and avocado as a garnish.
My favorite noodles to use in soups and casseroles are these No Yolks Broad Noodles.
I love adding them to a Spicy Asian Chicken Noodle Soup, a Healthy Tuna Noodle Casserole or a Cream of Chicken and Noodle Casserole.
No Yolks Noodles are so versatile, which is why I always have a bag in my pantry for those last minute meals. I like to think creatively when using No Yolks Noodles for things other than just casseroles.

No Yolks is a healthy egg noodle alternative, made from egg whites and no cholesterol, and are low in fat and sodium.

Lets talk quickly about how easy this dish is to put together.
Preheat the oven to 350 degrees F. Cook the No Yolks Noodles according to the package. While those cook heat 2 Tablespoons olive oil in a large skillet over medium heat and add the onion. Sauté for 2 minutes.
Add the garlic and continue to sauté for 2 more minutes.
Add the ground turkey and jalapeño and cook until the turkey is cooked through and browned.
Add the cooked noodles, taco seasoning, sweet corn, diced tomatoes, salsa and 1/2 cup of cheese. Stir until everything is combined. In a large oven safe casserole dish spray non-stick spray.
Pour the noodle mixture into the casserole dish and spread evenly into the dish. Sprinkle with the remaining 1 cup of cheese and cilantro.
Bake for 20 minutes, or until the cheese is bubbling. Remove from the oven and garnish with red onion, tomato, cilantro, green onion and avocado.

Easy Mexican Noodle Casserole makes weeknight meals easy, fun and festive with a colorful casserole packed with No Yolks Noodles, a rainbow of vegetables, ground turkey, spices and cheese. This dish will quickly become a family favorite.
Ingredients
- 6 oz. No Yolks Noodles, cooked according to package
- 2 Tablespoons olive oil
- 1/4 of a sweet onion, chopped
- 2 garlic cloves, minced
- 1 lb. ground turkey
- 1 jalapeño, seeds removed, chopped {optional}
- 2 Tablespoons taco seasoning
- 1 cup canned sweet corn {you can also use fresh or frozen in place of canned}
- 1 cup diced tomatoes, drained
- 1 cup salsa {I like a medium red salsa but use whatever you like or have on hand}
- 1 1/2 cups sharp cheddar cheese {or cheese of your choice}, divided
- 2 Tablespoons cilantro, chopped
Garnish ideas:
- Chopped red onion
- Cherry tomatoes
- Cilantro, chopped
- Green onion, chopped
- Extra cheese
- Avocado
- Extra salsa
Instructions

- Store the leftovers in an airtight container for up to 5 days.
Notes
Feel free to use ground beef in place of the ground turkey or even leave the meat out all together. You can also add other ingredients to the casserole like black beans, bell peppers and a variety of cheeses.
