Pesto Salmon with Parmesan Pesto Orzo - dinner

Pesto Salmon with Parmesan Pesto Orzo

Throughout the last 15 weeks of my pregnancy dinner has been a struggle to get on the table. My energy has been seriously lacking. I know a lot of you can relate to me, and you don’t have to be pregnant. Whether you work a full time job, are home taking care of your kids all day or just returning from a business trip, getting dinner on the table some nights seems like a huge chore.

I am always looking for a few quick dinner ideas that I can keep in my back pocket…or freezer…for those days when I just can’t stand in the kitchen and whip up a big meal. Today’s Pesto Salmon with Parmesan Pesto Orzo is a healthy, quick dinner that is ready in under 20 minutes. You can’t beat that!

For the salmon lovers out there it is nice to have a stash of frozen salmon in your freezer for the nights you are craving it.  Today’s Bumble Bee SuperFresh® Salmon with Garden Pesto is the perfect solution for a healthy meal that can go from your freezer to your table in under 20 minutes. It is richly satisfying with parmesan cheese, basil, almonds and a touch of garlic—a flavorful taste experience that features all natural ingredients and has no preservatives. The salmon comes with two filets per box and each is sealed, so you only have to use one at a time or whatever fits your family.

When you are ready to bake the salmon they provide a nice little parchment pouch. All you have to do is open the salmon which has the pesto on it, slip it into the parchment pouch, close it up and bake it. While the salmon bakes you make the parmesan pesto orzo, a quick vegetable, like these Simple Garlic Parmesan Green Beans, and you have yourself a nice little dinner. If you want to try some of their other seafood products they have a wide variety including Tilapia with Lemon, Pepper & Herbs, Tilapia with Garlic & Extra Virgin Olive Oil, Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil and Bumble Bee SuperFresh® Seared Ahi Tuna with Garlic-Peppercorn Rub.

I loved the fresh and light flavors of the pesto with the light, flaky salmon. I knew when I tried it that I had to pair it with my favorite parmesan pesto orzo. I don’t know about you, but orzo is one of my favorite sides to pair with dinner.
