When it comes to food holidays I would have to say that National Hummus Day might be my favorite. Lets celebrate with these Cucumber Hummus Bites.

You probably know my love for hummus by now and the fact that we eat a lot of it in my house.

Not only is it a healthy snack it also works great in a wide variety of recipes. We make all kinds of hummus from Roasted Red Pepper Hummus to Lemon Hummus to a Spicy Hummus. 

Hummus is my go-to snack, spread for Beef Shawarma Wraps, a Mediterranean Veggie Sandwich, or an addition to Mediterranean Chicken.

It is always nice to have a bowl of hummus, vegetables and pita setting out for your guests, but sometimes it is even better to have something a bit more creative waiting for them.

Today’s Cucumber Hummus Bites are simple to prepare, basic enough that most people like them but still a little bit creative and light.

Yes, these are the kind of unofficial meals we like to have in my house. I always find that the kitchen is where everyone gathers when I have get togethers or parties. Have you noticed that?

The key to happy guests is to have healthy appetizers and light foods out before you serve the main meal.

I love using cucumbers as the base for appetizers because they are lighter than serving bread or crackers. Cucumbers are also that perfect round shape to layer on your favorite ingredients. These Cucumber Hummus Bites use roasted red pepper hummus but these would be great with just about any flavor of hummus you like.

For example, another great combination would be a lemon hummus with toasted pine nuts and the tomatoes on the cucumber slice.

Ingredient Notes

  • Cucumber: I suggest using a seedless cucumber like a Persian or English cucumber. These can be cut thinner and have a thinner skin.
  • Hummus: You can use either a store-bought hummus or make your own. I always find homemade hummus to be the best because I can control what is in it. If you want to make your own try my Lemon Hummus, Roasted Red Pepper Hummus, Spicy Hummus or Lebanese Hummus.
  • Tomatoes: I used cherry tomatoes and cut them in half. You could also use finely diced tomatoes as a topping.
  • Cheese: Feta cheese is added to these cucumber bites. You also could use goat cheese if you like!

How to Make this Recipe:

This recipe couldn’t be easier to make!

Step 1: Slice Cucumbers: Slice the cucumber into 1/2 inch thin rounds and lay them out on serving platters.

Step 2: Add Hummus: Using a small teaspoon spoon a small amount of the roasted red pepper hummus onto each cucumber slice.

Step 3: Top with Other Ingredients: Top with the cherry tomato half, crumbled feta cheese and the freshly chopped parsley.

Serve chilled or store in an airtight container before serving.

What cucumber works best for these Cucumber Hummus Bites?

Seedless cucumbers, like English cucumbers or Persian cucumbers, work best! These minimize excess moisture and provide a firmer base. Ensure the cucumbers are fresh and firm for a crisp texture.

How thick should I make the cucumbers?

You want the cucumbers to be thin but not too thin that you can’t add toppings to them. Slice cucumbers into rounds about ½-inch thick to provide a sturdy base without being too thick to bite easily. You can pat the slices with a paper towel to remove excess moisture.

What hummus works best?

Fresh is always my favorite hummus to eat. If you want to make your own try my Lemon Hummus, Roasted Red Pepper Hummus, Spicy Hummus or Lebanese Hummus. You also can use your favorite store-bought hummus.

How do I prevent the cucumbers from being soggy?

Assemble the bites shortly before serving to prevent sogginess. Keep the cucumber slices and toppings separate until ready to put together.

Ingredients 

  • 1 english cucumber,, sliced into 1/2 inch thin rounds {my cucumber gave me 32 slices}
  • 1 – 10 ounce tub of Roasted Red Pepper Hummus or your favorite hummus
  • 16 cherry tomatoes,, cut in half
  • 2 ounces feta cheese,, crumbled
  • Freshly chopped parsley,, for garnish

Instructions 

  • Slice the cucumber into 1/2 inch thin rounds and lay them out on serving platters. Using a small teaspoon spoon a small amount of the roasted red pepper hummus onto each cucumber slice.
  • Top with the cherry tomato half, crumbled feta cheese and the freshly chopped parsley.
  • Serve chilled or store in an airtight container before serving.

Notes

  • These are great with a variety of vegetables. Try adding matchstick carrots, or thinly sliced red onion.
  • There are a variety of hummus options that would be great with this appetizer including the Lemon Twist, Roasted Pine Nut or the Rosemary Sea Salt.
  • Feel free to leave the feta cheese off if you do not like it.

      Yes! I might just cut the cucumbers and tomatoes and then add the hummus and top with the tomatoes in the morning.
