My favorite Mediterranean Veggie Sandwich is loaded with hummus and feta cheese, fresh vegetables and topped with sprouts. You won’t miss the meat in this vegetarian sandwich recipe.

MEDITERRANEAN VEGGIE SANDWICH 

Do you have days during the week that you go meatless? Maybe it is Meatless Monday? Or you decided that for three of the seven days out of the week you want to go meatless?

Recently Mike and I decided that as much as possible, my family will try to go meatless three days a week. 

Today’s Mediterranean Veggie Sandwich recipe is one of my favorite, easy vegetarian lunch options.

This Mediterranean Veggie Sandwich is inspired by one of my favorite sandwiches from Panera.

 This sandwich is nothing fancy and really simple to put together.  

You can use whatever vegetables you have on hand, either make your own hummus or buy your favorite, change up the cheese, add olives, or maybe avocado. Customize until your heart is content.

I am a hummus and feta cheese lover and I think their pair great on sandwiches.

 These match up really well with the fresh, crunchy vegetables.  My favorite part of the sandwich is actually the bread and the alfalfa sprouts.  

These two things take sandwiches to the next level for me.

Lets start with the alfalfa sprouts. I love sprouts on sandwiches, on top of a bagel with cream cheese or in soup. Those little guys are small, but powerful.  

Because they are so small, the sprouts contain a concentrated amount of certain vitamins and minerals such as calcium, vitamin K and vitamin C.

Alfalfa sprouts contain just 8 calories and 0 grams of fat per cup {source}.  So you can really bulk up a sandwich with them and give it that extra texture and you will feel like your sandwich has more to offer you.

Next lets talk about the bread.  For me, bread makes or breaks a sandwich.  

Am I right? Or am I right? Today’s Mediterranean Veggie Sandwich uses Dave’s Killer Bread Good Seed Thin Sliced Bread .  

Have you heard of Dave’s Killer Bread before? Somehow I missed the bandwagon on this one but I have since been converted.

The bread is packed with protein, fiber, whole grains and no artificial anything, USDA organic, Non-GMO Project Verified.  

It tastes great and has a good texture. It is soft, but not too soft. Oh, and those seeds! <3

My favorite Mediterranean Veggie Sandwich is loaded with hummus and feta cheese, fresh vegetables and topped with sprouts. You won't miss the meat with this sandwich.

Ingredients

  • 4 slices of Dave's Killer Good Seed Bread
  • 1/4 cup hummus of you choice {try this Roasted Red Pepper Hummus recipe}
  • 1/2 cup feta cheese, crumbles
  • 1/2 cup matchstick carrots
  • 4 tomato slices
  • 8-10 cucumber slices
  • 1 cup alfalfa sprouts, washed

Instructions

  1. Place the four slices of bread on a large cutting board and spread a layer of hummus one one side of each slice of bread.
  2. Sprinkle the crumbled feta on one half of each sandwich then top with matchstick carrots, tomatoes, cucumbers and finally the sprouts. Place the other half of the bread on the sandwich and cut in half.
  3. Enjoy!

I have been trying to go meat free on most days of the week! I have cut out beef and pork (none in over a month) and I have reduced the amount of chicken I eat. However, I don't know if I could ever give up seafood. But with that being said, I certainly don't have to eat it every day or even every week. I love all of the veggies and flavors in your mediterranean veggie sandwich, Julia. This is a sandwich that I will definitely add to the rotation!

PS, I've gotta find some of the Dave's Killer Bread. Sounds like my kind of bread! I'm forever reading bread labels in the store and Dave's sounds like a brand I wouldn't have to be weary about purchasing!

That is great that you have gone a month! Good for you. I try my hardest but my problem is that my husband likes his occasional steak and pork, so I end up making it for him and then eating it myself. Luckily we don't do that all of the time and have been doing a few vegetarian meals each week. If you can find Dave's Killer Bread you should buy it! We love it here!
