This easy Mediterranean veggie sandwich recipe is one of my favorite sandwiches to have for lunch.
This sandwich is inspired by one of my favorite Panera bread sandwiches. They have a delicious Mediterranean Veggie Sandwich that I like to order.
There is something so good about the creamy hummus and feta paired with the crunchy veggies and the alfalfa sprouts.
I love making my favorite restaurant foods at home. I get to control the ingredients and I know exactly what is going on the sandwich.
This sandwich is nothing fancy and really simple to put together.
Use whatever vegetables you have on hand, either make your own hummus or buy your favorite store bought hummus.
You can change up the cheese, add olives, or maybe avocado.

- Hummus: I spread hummus on the bread. I like to use my favorite Lebanese Hummus recipe, but you can use any flavor hummus, or buy your favorite store-bought hummus.
- Cheese: I like to add crumbled feta cheese to this sandwich, it adds a creamy texture and salty flavor to the veggies.
- Carrot: I like to use matchstick carrots which add real crunch.
- Tomatoes: Use any variety of tomato, I look for vine ripe tomatoes as I find they have more flavor.
- Cucumber: I like to use slices of English cucumber as you don’t need to remove the skin.
- Sprouts: I love adding alfalfa sprouts for added crunch, but you can use any variety of sprout in the sandwich.

Recipe Variations
This recipe is versatile and easy to adapt:
- Dairy Free: For dairy free and vegan diners, swap the feta cheese for a dairy free alternative, try a plant based feta cheese.
- Gluten Free: Use a gluten free sliced bread if serving this sandwich to celiacs or anyone following a gluten free diet.
- Spreads: Use any flavor of hummus in this recipe, try my Lemon Hummus, Roasted Red Pepper Hummus, or Spicy Hummus. You also can use pesto, mayo or this Lemon Whipped Feta Spread.
- Veggies: Feel free to add other veggies into the sandwich, try thinly sliced radish, lettuce, cooked eggplant, kalamata olives, peppadew peppers, red onion or red bell pepper.
- Greens: Greens are a great addition to a sandwich. I often add arugula for the peppery flavor it adds or try spinach, romaine or kale which work nicely too.
- Herbs: Add fresh herb flavor with some parsley, basil, mint, cilantro or dill.
- Cheese: I love to add feta cheese to a sandwich, but you can swap feta for any variety of cheese, try Swiss, gouda, sharp cheddar, soft goats cheese.
- Protein: I love a simple veggie sandwich, but if you can add extra protein if you wish, try sliced smoked salmon, roast chicken, turkey or ham.
How to Make a Mediterranean Veggie Sandwich
Step 1 – Prepare the Bread: Place the four slices of bread on a large cutting board and spread a layer of hummus one side of each slice of bread.
Step 2 – Add the Filling: Sprinkle the crumbled feta on one half of each sandwich then top with matchstick carrots, tomatoes, cucumbers and finally the sprouts. Place the other half of the bread on the sandwich, cut in half and serve.

- This sandwich is best made fresh, just before you plan to eat it.
- It makes a great lunch on the go, as the layer of hummus on each slice of bread does stop the wetter ingredients making the bread soggy.

This sandwich makes a great lunch option and I often serve it with a good side salad, like my Lebanese Salad, Lemon Arugula Salad, Mediterranean Bean Salad or Easy Arabic Salad.

When it comes to sandwiches you can add pretty much any veggie, everything from leafy greens to crunchy carrots, cucumber and radish, to sweet slices of tomato or creamy avocado. However, don’t just limit yourself to fresh veggies, pickled vegetables make a great addition to a sandwich too, not only adding crunch, but also a touch of sourness.
If you don’t want to use sliced bread, this recipe would work just as well in a pita, corn or wheat tortilla, or any other flatbread.

I have been trying to go meat free on most days of the week! I have cut out beef and pork (none in over a month) and I have reduced the amount of chicken I eat. However, I don’t know if I could ever give up seafood. But with that being said, I certainly don’t have to eat it every day or even every week. I love all of the veggies and flavors in your mediterranean veggie sandwich, Julia. This is a sandwich that I will definitely add to the rotation!
PS, I’ve gotta find some of the Dave’s Killer Bread. Sounds like my kind of bread! I’m forever reading bread labels in the store and Dave’s sounds like a brand I wouldn’t have to be weary about purchasing!
That is great that you have gone a month! Good for you. I try my hardest but my problem is that my husband likes his occasional steak and pork, so I end up making it for him and then eating it myself. Luckily we don’t do that all of the time and have been doing a few vegetarian meals each week. If you can find Dave’s Killer Bread you should buy it! We love it here!

I love a chicken salad sandwich with some lettuce and tomato.
My favorite is a Rueben – although I don’t eat these very often.
