Spicy snack season is in full swing.

I don’t know about you guys but I love buffalo anything whether it is buffalo chicken sandwiches and wraps, my Buffalo Dip, Buffalo Chicken Quesadilla, or this Buffalo Queso Cheese Chicken Dip.

There is something about that spicy flavor that gets me this time of year.

Today’s roasted buffalo cauliflower wings is a healthier option if you like snacking at tailgates, Sunday football watching parties, or even the Super Bowl.

I like to call them roasted buffalo cauliflower bites, since they are a great bite sized, finger food. I am always the one at the appetizer table and I appreciate it when the host has some healthier options.

The cauliflower is roasted in the oven until just crispy, satisfying your craving for those crunchy foods and still packing in tons of flavor. It’s a great way of snacking, while getting in your 5-a-day!

Roasting cauliflower really does bring out the sweet flavor in this delicious vegetable, its a great tasting vegetable that works really well with spices.

  • Low Carb & Gluten Free: Roasted Buffalo Cauliflower is a great low carb snack, it is also a great gluten-free snack as long as the hot sauce you use is gluten-free. I found Frank’s Hot Sauce to be gluten-free.
  • Dairy Free & Vegan: As long as your hot sauce is vegan {Frank’s hot sauce is}, and you don’t serve it with blue cheese dressing, this makes a great dairy free and vegan snack.

Recipe Ingredients and Substitutions

  • Cauliflower: 1 medium head of cauliflower will give you 8 cups of florets, which is enough to feed 4 as an appetizer.
  • Oil: I’ve used canola oil for roasting the cauliflower as it has a high heat temperature. You also could use avocado oil.
  • Ground spices: I flavor the cauliflower with a mixture of garlic powder, ground cumin and paprika.
  • Seasoning: I also season the cauliflower with some sea salt and ground black pepper.
  • Hot sauce: you can use any brand of hot sauce, I like to use Frank’s.
  • Garnish: I garnish the buffalo cauliflower with some crumbled blue cheese and freshly shopped parsley.
  • Blue cheese dressing: I like to serve the cauliflower with a bowl of blue cheese dressing for dipping.

How To Make This Roasted Buffalo Cauliflower Recipe

Step 1: Preheat the oven: Preheat the oven to 400 degrees F.

Step 2: Coat the cauliflower: In a large bowl put the 7 to 8 cups of cauliflower florets and add the canola oil. Toss to coat.

Step 3: Roast the cauliflower: Spread the cauliflower in a single layer on a baking sheet. Roast for 20-25 minutes, turning once until the cauliflower is just starting to get crisp and the edges brown.

Step 4: Make the sauce: While the cauliflower roasts create your sauce. In a medium mixing bowl combine the garlic powder, cumin, paprika, salt, pepper, hot sauce and stir to combine.

Step 5: Coat the cauliflower in sauce: Once the cauliflower is done roasting remove from the oven and place the cauliflower back in a large mixing bowl. Pour the sauce over the cauliflower and toss to coat. If you want to crispy the cauliflower up a bit more you can put it back in the oven for about 2-3 more minutes but it isn’t necessary.

Step 6: Garnish and serve: Serve warm garnishes with crumbled blue cheese, a side of blue cheese or ranch dressing and celery.

Recipe Modifications For This Roasted Buffalo Cauliflower Recipe

  • Cauliflower: I’ve used regular cauliflower, but this recipe would also work well with other vegetables like broccoli, romanesco, or Brussels sprouts.
  • Vegetables: try using a mixture of roasted vegetables with the buffalo sauce.
  • Ground spices: this recipe is easily adjusted to suit your own tastes, if there is a spice you don’t like leave it out. Likewise feel free to add spices that you do enjoy.
  • Hot sauce: use your favorite brand of hot sauce in this recipe and go as hot as you like.
  • Blue cheese: if you don’t like blue cheese, you can swap it for some crumbly feta cheese.
  • Blue cheese dressing: swap the blue cheese dressing for sour cream, a creamy ranch dressing, or try my Lemon Whipped Feta Dip.

Roasted buffalo cauliflower wings with a blue cheese dipping sauce is a tasty appetizer, ideal for get togethers with family and friends, it also makes a great games night snack. I love to pair mine with a creamy, cool ranch or blue cheese dressing and crunchy celery.

However, you can also add the roasted cauliflower to other dishes, it works great in bowls and I often add it to my I love adding it to my Mediterranean Buddha Bowl, or try making buffalo cauliflower tacos.

It also makes a great side dish to serve alongside any main meal like my Air Fryer Chicken Tenders, Greek Marinated Chicken Kabobs, Beef Kafta Kabobs, or my Pan Seared Pork Chops.

Storage Tips

  • Leftovers: store leftover cauliflower in an airtight container, in the refrigerator, for 2-3 days.
  • Reheating: to reheat leftovers place back into a hot oven to warm through.
  • Freeze: once cooked and cooled, cover the cauliflower with kitchen foil, place into an airtight container and store in the freezer for up to 3 months. Defrost thoroughly in the refrigerator overnight and place in a warm oven to heat through.

How do you prevent cauliflower from getting soggy?

The key to crispy cauliflower is to roast at a temp of roast at a high temperature (400 – 425°F), and make sure to spread the florets in a single layer with space between. Don’t add the hot sauce until either after you are done cooking or right at the end of cooking.

What is the best hot sauce to use?

This is a preference. Use your favorite bottled buffalo sauce (like Frank’s RedHot of Buffalo Wild Wings). You also can make your own with hot sauce, butter, garlic powder, and a splash of vinegar.

Can you make this ahead of time?

Yes you can! It is great for meal-prep. Just roast the cauliflower and store it in an airtight container for up to 3 days. When you are ready to reheat you can air fry it or quickly heat it in the oven.
