TOMATO TOAST WITH WHIPPED FETA

I don’t know ab0out you guys but I love avocado toast.

Whether it is this Southwestern Avocado Toast or this Tropical Avocado Toast I eat it a lot throughout the week. 

I also love to mix it up and rotate this Tomato Toast with Whipped Feta into my toast recipes. 

My kids like to call it tomato garlic bread. What I love most about this toast is it can be used for a special occasion, breakfast, a snack, an appetizer or even a side to a meal. 

When I studied abroad in Barcelona, Spain there was a pan con tomate recipe that I ate a lot and today’s recipe reminds me a little of that. 

The difference in today’s recipe is that it uses heirloom tomatoes that are cut into slices. 

I personally love using heirloom tomatoes in the summer on toast because they are so flavorful and juicy but any tomato will work. 

You also could use these Simple Marinated Tomatoes on the toast which pair so nicely with the whipped feta cheese.

WHAT YOU NEED TO MAKE TOMATO TOAST

SOURDOUGH BREAD

BUTTER

GARLIC

SPICES

HEIRLOOM TOMATOES

FRESH HERBS

FOR THE WHIPPED FETA:

CRUMBLED FETA CHEESE

GREEK YOGURT

EXTRA VIRGIN OLIVE OIL

GARLIC

LEMON JUICE

HOW TO MAKE TOMATO TOAST WITH WHIPPED FETA

PREPARE THE BREAD: Lay our sourdough bread out on a cutting board. Spread a thin layer of the garlic butter on each piece of bread. Sprinkle za’atar on top of the butter {optional}.

TOAST THE BREAD: Toast the bread in the oven for 5-8 minutes, until toasted and slightly crispy.

WHIP THE FETA: While the toast bakes add the feta cheese, Greek yogurt, olive oil, garlic and lemon juice to a mixer and mix on medium for 3-4 minutes until whipped. You also could add the ingredients to a small bowl and stir until creamy and smooth.

Remove the toast from the oven and spread the whipped feta on each piece of toast.

ADD THE TOMATOES & HERBS: Add the heirloom tomatoes on top of the whipped feta. Sprinkle the fresh basil, parsley and more za’atar {optional}. Serve immediately.

WAYS TO MODIFY TOMATO TOAST WITH WHIPPED FETA

CHEESE: You could use goat cheese in this recipe instead of the feta. You would just sub in the crumbled goat cheese for the feta and whip it so it is soft and can be spread easily. You also could try cream cheese if you want.

VEGETABLES: Other vegetables I like to add to this toast is sliced radishes, sun-dried tomatoes, shaved cucumbers, artichokes, sliced red onions or roasted red peppers. 

FRESH HERBS: I love adding fresh herbs to this toast. Some that work nicely are dill, mint, basil, parsley, thyme and oregano. 

SPICES: I used za’atar and sumac to add flavor to this toast. Other spices that are nice on this toast are Italian seasoning, paprika or crushed red pepper. 

BREAD: I used sourdough bread for this toast but any crusty bread works nicely. I have used whole wheat, rosemary and Italian bead. 

TOMATOES: You can use cherry tomatoes or any variety of tomatoes in place of the heirloom tomatoes. Another option is to add roasted tomatoes and garlic to the toast instead of serving the tomatoes raw.

Ingredients

  • 8 slices of Heinen's sourdough bread
  • 8 tablespoons Heinen's butter
  • 2 garlic cloves, minced
  • 2 teaspoons za'atar or sumac {optional}
  • 4-5 small heirloom tomatoes, sliced
  • Fresh basil and parsley for garnish
  • Dash of salt and pepper

FOR THE WHIPPED FETA

  • 7 ounces Heinen's crumbled feta cheese
  • 2 tablespoons Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a small mixing bowl mix together the room temperature butter and minced garlic.
  3. Lay our sourdough bread out on a cutting board. Spread a thin layer of the garlic butter on each piece of bread. Sprinkle za'atar on top of the butter {optional}.
  4. Toast the bread in the oven for 5-8 minutes, until toasted and slightly crispy.
  5. While the toast bakes add the feta cheese, Greek yogurt, olive oil, garlic and lemon juice to a mixer and mix on medium for 3-4 minutes until whipped. You also could add the ingredients to a small bowl and stir until creamy and smooth.

Notes

If you are just making this toast for two people you can easily cut the recipe in half.

Another great option is to use crumbled goat cheese and make a whipped goat cheese in place of the feta.

Any variety of tomato works great- I do love heirlooms for their flavor and how juicy they are. They work great on toast.
