CHICKEN FETA CHEDDAR PITA PITZA

You might remember when I shared this Spiced Beef and Hummus Pita Pitza a few months ago.

We love making pita pitzas in my house because they are easy to put together and customizable.

You can make each person’s pita pitza to their liking depending on what they like.  

With today’s Chicken Feta Cheddar Pita Pitza some people might not like the feta cheese so you can leave that off of their pitza and use a different cheese in its place.

Maybe you have a vegetarian in your house?

You can leave off the chicken and add things like chickpeas for protein and vegetables, like cherry tomatoes, cucumber and diced onion.

Other flatbread options that I like are this Spiced Ground Lamb PitaGreek Pita Pizza, Mediterranean Flatbread, and this Mediterranean Naan.

I first ate a pita pitza with similar ingredients to today’s Chicken Feta Cheddar Pita Pitza at our favorite local Mediterranean restaurant, Aladdin’s Eatery.

I loved the creamy feta with the sharp cheddar and the shredded chicken.

I also really like how crispy the pita gets, similar to a pizza crust. If you can find whole wheat pita bread you can use that which is a healthier option.

To make these Chicken Feta Cheddar Pita Pitza you will just lay the pita bread on baking sheets, brush with olive oil and top with the chicken, feta and sharp cheddar cheese.

Throw them in a preheated oven and toast for 10 minutes, or until the bread gets toasted and the cheese melts.

When I pulled the pitzas out of the oven I gave them each a good sprinkle of freshly chopped parsley and za’atar, but that is optional. Like I said these are very customizable so get creative and make these your own.

I really like these simple 4 ingredients together but the options are really endless.

If you want to make this a full meal add on a tabbouleh salad, Lebanese green beans and a side of hummus!

Chicken Feta Cheddar Pita Pitza

Chicken Feta Cheddar Pita Pizta is four ingredient pizza using pita bread, shredded chicken, feta cheese and sharp cheddar cheese that is toasted and topped with fresh parsley. These pita pitzas make the perfect dinner or lunch!

Ingredients

  • 4 whole-wheat or white pita breads (each 7 1/2 inches)
  • 1 teaspoon olive oil
  • 4 cups cooked, shredded chicken
  • 1 cup feta cheese, crumbled
  • 1 cup sharp cheddar cheese, shredded
  • Freshly chopped parsley
  • Za'atar to sprinkle on top {optional}

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Lay the pita bread rounds on two baking sheets and lightly brush them with the olive oil.
  3. Top the pita rounds with the shredded chicken, feta cheese and sharp cheddar cheese, separating the ingredients equally between the four pitas.
  4. Toast the pita pitzas for 10 minutes, or until the pita bread is toasted and the cheese is melted.
  5. Sprinkle fresh parsley over top of the pita pitzas and a sprinkle of za'atar.

Notes

These work great with a variety of cheeses so try your favorite.

These pita pitzas are great with just the simple ingredients I used but also work nicely with extra vegetables like cherry tomatoes, diced onion and banana peppers. Get creative!

      @Julia, i worked at an Aladdinโ€™s eatery 17 years ago this was my favorite pitza, i always got the garlic sauce put on it as well! I have been searching the internet far and wide for their homemade garlic sauce recipe! If you have tried it you know its not the same as others Iโ€™ve tried to make. Maybe my memory has faded and i have built this sauce up in my head. Idk ill be making a drive to Raleigh soon enough to get my hands on some!

        That is so funny! We love Aladdins so much. I love about 5 minutes from one in Ohio. It is very close to the Lebanese food my grandma made growing up. <3 I love that garlic sauce too. I haven't been able to recreate it either but I need to keep trying to perfect it. Thanks for sharing!
