When it comes to food holidays I would have to say that National Hummus Day might be my favorite.
You probably know my love for hummus by now and the fact that we eat a lot of it in my house.
Not only is it a healthy snack it also works great in a wide variety of recipes. We make all kinds of hummus from Roasted Red Pepper Hummus to Lemon Hummus to a Spicy Hummus.
Hummus is my go-to snack, spread for Beef Shawarma Wraps, a Mediterranean Veggie Sandwich, or an addition to Mediterranean Chicken.
It is always nice to have a bowl of hummus, vegetables and pita setting out for your guests, but sometimes it is even better to have something a bit more creative waiting for them.
Today’s Cucumber Hummus Bites are simple to prepare, basic enough that most people like them but still a little bit creative and light.
We like to call that pre-dinner snacking the “unofficial meal.”

Yes, these are the kind of unofficial meals we like to have in my house. I always find that the kitchen is where everyone gathers when I have get togethers or parties. Have you noticed that?
The key to happy guests is to have healthy appetizers and light foods out before you serve the main meal.
I love using cucumbers as the base for appetizers because they are lighter than serving bread or crackers. Cucumbers are also that perfect round shape to layer on your favorite ingredients.
These Cucumber Hummus Bites use Sabra Roasted Red Pepper Hummus but these would be great with just about any flavor of hummus you like.
Here’s how I made these Cucumber Hummus Bites. I added a sliced cherry tomato, crumbled feta cheese and fresh parsley to each Cucumber Hummus Bite but you can get creative based on your guests likes.
For example, another great combination would be the Sabra Rosemary Sea Salt Hummus with toasted pine nuts and the tomatoes on the cucumber slice.
Another great combination would be the Lemon Twist Hummus with matchstick carrots and feta cheese. The options are really endless!
As you start to think about summer grilling, picnics and BBQs you are going to need a lot of great appetizer up your sleeve.
These Cucumber Hummus Bites would be a nice addition to your summer meal and you can prep these right before you leave, keep them on ice and serve your guests when you are ready.
Not only do these look beautiful, but they are healthy.
You can eat these without feeling a lot of guilt when you go back for seconds, thirds and fourths.
Cucumber Hummus Bites
Cucumber Hummus Bites make the perfect finger food and appetizer for your next party or get together. Crisp cucumbers slices are topped with roasted red pepper hummus, tomatoes, feta cheese and fresh parsley.
Ingredients
- 1 english cucumber, sliced into thin rounds {my cucumber gave me 32 slices}
- 1 - 10 oz. tub of Sabra Roasted Red Pepper Hummus
- 16 cherry tomatoes, cut in half
- 1 - 2 ounces crumbled feta cheese
- Freshly chopped parsley
Instructions
- Slice the cucumber into thin rounds and lay them out on serving platters. Using a small teaspoon spoon a small amount of the roasted red pepper hummus onto each cucumber slice.
- Top with the cherry tomato half, crumbled feta cheese and the freshly chopped parsley.
- Serve chilled or store in an airtight container before serving.
Notes
These are great with a variety of vegetables. Try adding matchstick carrots, or thinly sliced red onion.
There are a variety of hummus options that would be great with this appetizer including the Lemon Twist, Roasted Pine Nut or the Rosemary Sea Salt.
Feel free to leave the feta cheese off if you do not like it.
